There is an alternative for the one you say not to say. Use mushroom instead of chicken!
For fake bologna soak sliced beets in soya sauce! (If you want simulated uncooked bologna ) to use them after soaked: you par boil the sliced beets! (if you want fake fried bologna fry the par boiled beets). For Fake roast make bread dough but instead of using all water when water is called use 3/4 soya sauce and 1/4 water other than that make the dough as usual. .. do the usual steps to Let rise do kneeding the do as usual.. when ready to bake.. par bake the dough! when half cooked.. let cool then slice and fry in pan with a little cooking oil... result you have the Fake Steak!

If you mean taste and texture, obviously it's meat itself. The mock "meats" and TVPs etc can approximate the taste but doesn't quite make it. And the texture is totally different. Close but no cigar as they say..
If you mean in nutritional value, probably none
