Is there good vegan substitutes for eggs and butter?!
Answers: I've cut down on animal products drastically lately, for both ethical and health reasons. Wondering if anyone had any suggestions?
What are you trying to replace them in?
In general, you can use (vegan, duh) margarine or earth balance buttery spread.
For eggs, it depends on what you're wanting. If you want scrambled, tofu works great. If you need it as a binder in baking, Ener-g Egg Replacer or flaxseed or bananas, etc.
I found this recipe, but have never tried it:
"FOR EVERY TWO WHOLE EGGS, SIFT TOGETHER
1 Tbsp tapioca or corn starch
1 Tbsp potato starch
1/4 tsp baking powder
1/8 tsp xanthan gum (if you have it)
Add a scant 1/2 cup water and 2 tsp oil. Whisk until thoroughly combined and somewhat frothy.
This egg replacement works well in delicate, light-colored items like yellow cakes, and sweet muffins....
It does not alter the flavor, like Ener-G Egg Replacer or Flax goop does (see below).
It provides the structure that egg whites normally do.
It leavens like beaten egg whites do, because you trapped lots of air bubbles when you were whisking it (you did whisk it thoroughly before you dumped it in, right?) And it contains some baking powder.
It provides the moisture and fat that egg yolks provide.
But it does not promote browning, add protein, or impart a lovely yellow color, like real eggs do."

I, personally, love the Smart Balance Organic or soy garden vegan options that are available in many stores. I bake and cook with them, too. As far as eggs go, I haven't found any yet, so I still purchase the eggs that are certified humane from cage free hens. I've heard that some cage free claims aren't all they're cracked up to be (pardon the pun) so I do look for the "certified humane" stamp on them. I was diagnosed as severely anemic a few times and was advised to eat egg yolks for the iron, but that's just my own personal thing.
I eat tahini (ground up sesame seeds) on baked potato, toast etc, also macadamia butter, cashew butter (much better for you than peanut butter.)
I like to bake with flax seeds for eggs...one TBSP flax seeds ground up in the blender to 3 TBSP boiling water mixed in and let it set up and gel a little bit (for one egg).
There is also Ener G egg substitute..
I've used Ener-G. It's good
