Homemade tofu. Has anyone experimented with Xanthum gum / agar agar or Guar gum? or Epsom salts?!


Question: Does it work? How does it taste?
Did you get any side effects from using epsom salts?
Is it possible to make very FIRM tofu with these coagulants?

I have made tofu using epsom salt before. It doesn't add any taste really. The firmness is determined by how long you leave it under pressure to push the moisture out of it.

I've used agar agar for desserts before and it worked. I don't know anything aput epsom salts though. What's your tofu recipe?

the biggest issue with Epsom's salts, if u consume too much of it, you have loose stool. great for you if you don't get enough fiber =)
