I am making veggie lasagna, need a recipe for a creamy sauce but want it to be vegan?!
Answers: I have a box of instant mashed potatoes. I was thinking maybe that could be the base of a creamy sauce, add some onions and garlic and sea salt and thin it with some vegetable stock. Would that work? Anyone have ideas of a creamy vegan sauce I can use for the lasagna layers?
It's going to be quite grainy if you make it with potatoes, and will taste very starchy.
You might want to try making a white sauce with a box of plain soya milk, like Silk plain, an equal amount of 'vegetarian chicken' or plain vegetable broth, pureed garlic, and cracked black pepper. You can also buy Silk 'cream replacer' at the grocery store to replace heavy cream in any recipe.
Vegan Cheese Sauce Recipe
1 Cup of water
1 Cup of cashews
1/8 Teaspoon of salt
1 Teaspoon of onion powder
Sprinkle of garlic powder
2 Tablespoons of lemon juice
If you have a good blender place the water and cashews in first, then put in the rest of the ingredients. This healthy cheese sauce is wonderful for lasagna . pizza, burritos, or tacos.

Easy Vegan Pasta Sauce
INGREDIENTS
1 teaspoon vegetable oil
1/2 small yellow onion, diced
2 cloves garlic, minced
5 large tomatoes, cubed
1 small green bell pepper, diced
1/2 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried basil leaves
1/2 teaspoon dried oregano
DIRECTIONS
In a skillet over medium-low heat, saute onion and garlic in the vegetable oil. Place tomatoes into onion and garlic mixture. Stir in diced bell pepper, salt, pepper, basil and oregano. Let simmer for 20 minutes, stirring occasionally. Turn down heat if it starts to stick.
i dont think u can get anything like that. the word creamy kinda relates to lactose. umm since you have all the ingredients. what about making a eggplant lasagne (but it has cheese in it. maybe just not add the cheese)? . also you can try White bean & leek ravioli with roasted capsicum sauce. if you want any of those recipies tell me.good luck.

I've used pureed squash as a base for a creamy sauce before and it comes out great. Just cook any kind of squash and let it cool. Take all the squash out of the shell and put it in your blender or food processor. Go ahead and add your garlic, onions, some basil and italian spices. For a little firmness add some firm tofu. The tofu will give it creaminess also, but the squash will give it excellent flavor. Just experiment with it. You'll know when it's right.
