Cooking seitan?!


Question: I am making seitan, it's been cooking for about 1 hour and looks like rubbery blobs. Can you change the texture? (I'm sure this batch is spoiled already but....)

any tips?

Did you knead it really well? It's going to look a little blobby when you simmer it. But if you knead it enough, it will be chewy and not rubbery. I use vital wheat gluten to save time.

I've heard that if you bake the seitan in a 350 degree oven for about 30 minutes, it might help improves the texture of seitan. Give it a try.
