Cooking seitan?!

Answers: I am making seitan, it's been cooking for about 1 hour and looks like rubbery blobs. Can you change the texture? (I'm sure this batch is spoiled already but....)

Did you knead it really well? It's going to look a little blobby when you simmer it. But if you knead it enough, it will be chewy and not rubbery. I use vital wheat gluten to save time.
I've heard that if you bake the seitan in a 350 degree oven for about 30 minutes, it might help improves the texture of seitan. Give it a try.
