Healthy vegan birthday cake?!


Question: My birthday is in a few weeks and my friend is hosting a birthday party for me. She knows I'm trying to eat healthier, but unless I give her a recipie for a vegan cake recipie or at least something as low fat/low sugar as possible, she's going to get this god awful store bought bakery cake. Where can I find a good vegan alternative? And it's gotta TASTE good since I'm having guests. I don't want them to know it's vegan and healthy.

That has a few different types of cakes which are all vegan.

The problem with cake is that it isn't healthy.

But all cake has lots of sugar. I tend to go for the carrot. I love the spices and frosting and most people cannot tell that it is vegan.

Ask your family or friends for a cake recipe, and then modify it! Most families have some sort of family recipe for their favorite cake. Just substitute soy or rice milk for cow's milk, soy butter for regular butter or margerine, and use applesauce in place of eggs. For the frosting, combine silken tofu, vanilla extract, agave or sugar, and cocoa powder to taste, blend it in your blender, pop it in the fridge, and voila! A great cake frosting. The ION (It's Only Natural) cookbook has some FANTABULOUS vegan cake recipes, my favorite being the chocolate cake with raspberry filling and crushed toasted hazlenuts. If you're not into the from-scratch baking, Cherrybrook Kitchen makes quite possibly the best cake & frosting mixes and you can get them at many grocery & natural food stores. Good luck!

im not sure about the healthy
but for about any cake you can substitute applesause for eggs
and not even taste the difference.

I use a mix from Cherrybrook Kitchen. I also often use apple sauce instead of melted margarine so it's even better and it tastes great. Unfortunately, it can be difficult to turn out if the pan is an odd design though. You can find them on line or at Kroger Stores.

Vegan Carrot Cake

This is a yummy carrot cake with rich cream cheese frosting. 12 servings 1? hours 30 min prep
Change to: servings US Metric
3/4 cup sugar
1/2 cup brown sugar
2 cups flour
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
3 cups finely-shredded carrots
3/4 cup vegetable oil
3/4 cup applesauce
2 teaspoons vanilla
4 egg substitute (Ener-G)
1/2 cup chopped nuts (optional)
Cream Cheese Frosting
3 ounces Better Than Cream Cheese cream cheese substitute
1/4 cup margarine
1 teaspoon vanilla
1 1/2 cups powdered sugar

Grease and flour a 10" X 9" or square cake pan.
Stir together dry ingredients.
Mix in the carrots, egg subs, oil, apple sauce, and vanilla.
Beat about 2-3 minutes , until well mixed.
Stir in the nuts, if used.
Bake at 325 F for about 40-50 minutes , or until a toothpick comes out clean.
Cool on a wire rack.
Once the BTCC is at room temperature, mix all ingredients together. Frost cake.
