Lunches in high school?!


Question: Well school is coming back soon, which means no more waking up at 12 in the afternoon and making a loaf of toast for brunch (unhealthy? yes, addictive? definitely!)

Anyway! The problem is my canteens idea of "healthy" is wedges covered in sour cream. The salads are all extremely expensive and almost always are basically an array of meats covered in some strange dressing, which doesn't quite cut it for a vegetarian.

I was wondering if anyone out there had a delicious finger food kind of snack that would be able to sit in my bag with nothing but an ice block to keep it safe until being devoured in my 20 seconds I will have between classes. At the moment, the only ideas I have is salad, sushi, and cold rolls.
I won’t eat poultry, seafood, pork, red meat, rennet, gelatine and I can't handle a lot of milk. But on the plus side I love to cook! So if you have any adventurous ideas, send them my way! I would really appreciate it! cheers!

How about couscous? Is delicious as a cold or room-temperature salad, is filling and can be as interesting as you want it. It's not quite finger food but you can carry it in a Tupperware with a fork or spoon pressed into the top - tie a plastic bag around it for safety's sake.

This one is a fave of mine; the nuts are good for slow-release energy:
Persian Couscous

Ingredients:
1 cup couscous - uncooked
2 tsp. vegetable stock powder
1/2 tsp. sugar
1/2 an orange rind grated
2 cups boiling water
1/2 cup chopped almonds or pine nuts
1/2 cup currants
2 tbs. butter or olive oil
1/2 cup dried apricots
2 spring onions
1/4 cup chopped coriander leaves

Method:
1. Stir the couscous, stockpowder, sugar, and grated orange rind together in a bowl.
2. Add boiling water and leave to stand for 6 minutes.
3. Heat nuts and currants in the butter until the nuts turn lightly brown and the currants swell.
4. Chop the apricots and add to nuts and currant mixture.
5. Stir nut and fruit mixture into the couscous.
6. Add spring onions and coriander just before serving.

This dish may be served hot or cold.

i always make myself little salad and cheese wraps to take to school. avoid putting beetroot and juicy tomato in them though, it turns them soggy!

Enjoy some wholesome carrots.

I always pack fruits (what eva's in season), mixed nuts, & celery/carrot n cucumber sticks (chopped up the night b4). Freeze small carton of V8 veggie juice to keep it all cool n fill u up. I know its much harder when your at school / uni.
