I am a vegetarian (even though that has nothing to do with this) and my mom is too. My favorite veggie is brocolli and green beans....yum. My mom's is asparugus (i think).

stir-fried broccoli and mushrooms (i just empty and pack of frozen broccoli and put some fresh muchrooms in a pan and heat them, i dont use and butter or sauce)

Fresh sweet peas.

Carrots, yummy. Raw, sliced in a salad or steamed.

Spinach! I'm having some right now, with a touch of garlic and chilli.

Like you I love broccoli, but I also love runner beans, asparagus and red onions

I'm not a vegetarian, but I love my veggies. Roasted peppers are my favourite, followed by roasted parsnips.

Can someone please explain the thumbs down?????

summer- fresh corn on the cob with lots of butter and salt and pepper

winter- broccoli and edamame

would have to say corn or cucumber although I think cucumber is a fruit

brussels!! serious my nan cooks them sooo good she boils them in salt water and you have to eat them hot of course there crap cold but yumm their the bomb

Sweet potatoes, then probably asparagus, then green beans cooked with red onions and new potatoes.

Potato, pea, carrot, corn, beets, mushroom, artichoke, cauliflower, avocado, green beans, asparagus, sweet potatoe, red onion, white onion, sweet corn.

Broccoli is by FAR my favorite veggie. I prefer it raw. :-D

Coming in close are onions, brussel sprouts, baby carrots and cucumbers.

since i am also vegetarian so i like eating carrots,sweet corn and cucumber very much.

Oh, it depends on the meal. I love asparagus, but it's expensive. I love tomatoes in the summer when they are fresh. I love baked sweet potatoes. I love most any steamed veggie, but probably those I mentioned above are my favs........but i still have to have my meat!!! (smile)

The veggies that I do not like are:
Asparagus
Brussel Sprouts
Mushrooms

That's a tough all veggies taste so good except for eggplant that one is yecky but my favourite veggie is either beets or brussel sprouts.. it's a toss up between the two if you want just one answer it's beets! beets can be used in salads, in soups, in vegetarian ways for making fake meats, beets can be used in making relish! Beets can even be used in making deserts! Beets taste good raw too! They are high in iron too just as good as dark green veggies such as spinach! Beets winning vegetable in every way I can think of! Beets shredded can be used to decorate a plain looking dish!

I love cooked carrots and I like to dip raw carrots in ranch dressing....yum!

oh hell yes!!! it's by far my favorite veggie and i find a way to eat it all year round!!!!! fresh then frozen! i can't do canned!!

Pasta With Asparagus Pesto

1 pound penne or other tubular pasta
1 pound asparagus
1/4 cup pine nuts
2 or 3 medium garlic cloves
1/2 teaspoon salt
1/2 cup extra-virgin olive oil
2 ounces freshly grated Parmigiano-Reggiano (about 2/3 cup)

In a 6- to 7-quart kettle bring about 5 quarts salted water to a boil for pasta.
Have ready a bowl of ice water. Trim woody ends from asparagus. Cut asparagus stalks crosswise into 2-inch pieces, reserving tips. In a steamer set over boiling water steam stalks, covered, 4 minutes. Add reserved asparagus tips and steam, covered, until just tender, about 1 minute. Immediately transfer asparagus to ice water to stop cooking. Drain asparagus well in a colander and pat dry.
In a food processor pulse pine nuts and garlic with salt until finely chopped. Add asparagus and oil and pulse until asparagus is coarsely chopped. Transfer pesto to a large bowl and stir in Parmigiano-Reggiano. Cook pasta in boiling water until al dente. Reserve 1/3 cup pasta cooking water and drain pasta in a colander. Add pasta and reserved cooking water to pesto, tossing to coat, and season with salt and pepper.
Cream of Asparagus Soup

2 cups of fresh asparagus spears, chopped.
1 onion, minced.
2 ? cups of water.
? butter.
1 cup of evaporated milk.
? cube of chicken bouillon.
1 teaspoon of salt.
4 tablespoons of pillsbury cornstarch, dissolved in ? cup of water.
? cup of cheese, grated.

Instructions for Cream of Asparagus Soup:

In a saucepan, boil the asparagus spears and the onion in 2 ? cups of water until tender.

Mash the softened vegetables and pass through a fine strainer or cheesecloth.

Put back the strained vegetable puree into the stock.

Add the butter, milk, cube, salt and cornstarch.

Cook over moderate flame until smooth and thick, stirring continuously with a wire whisk.

Add grated cheese and simmer for a few minutes.

Serve hot.

Asparagus and Crab Quiche ingredients list:

1 cup of chopped cooked crab meat.
1 x 8" pastry case.
4 oz Parmesan cheese.
1 ? cup of Milk.
3 x beaten Eggs.
10 x Asparagus spears.
Nutmeg, salt and cayenne pepper to taste.
Instructions for Asparagus and Crab Quiche:

Sprinkle the crab meat in bottom of pastry case.

Cut asparagus spears into half-inch slices and scatter over top of the crab.

Sprinkle the parmesan cheese over asparagus and crab.

Beat eggs and mix with the milk, season to taste with nutmeg, cayenne pepper and salt.

Pour the mixture into the pastry case.

Bake in preheated hot oven for about 45 minutes or until set.

Leave to sit for around 15 minutes before serving.
