What is miso?!


Question: I recently posted a question asking for veggie recipies for my kids, a lot of them have miso as an ingredient, but what is it? Im in the uk so maybe we call it something else?

Miso is a Japanese bean curd paste. It's often made with fish stock, so be careful to only get the bean curd paste without the fish stock (dashi is fish stock)

Miso is a paste made of soy beans which have been boiled, crushed, and mixed with a culture made of wheat, rice, barley, or beans. The mixture ferments for up to 3 years. The paste is used for soups, ramen, sauces, marinades and even dressings. Miso is available in red, yellow and white versions. Really good, it's not really rare, harmful, allergenic. Works as good substitutes and tastes yummy.
