I am a vegan, so I do not eat ANY animal products. Many vegetarians eat eggs, cheese and milk, because if they didn't they would more likely than not just go vegan entirely.

I eat cheese and other milk products. I don't really eat egg, unless it's baked into cookies or cake or something else somebody else made (I don't cook with it).

To be 'vegan', you have to avoid these products. There is technically a difference between vegans and veggies. A true veggie does not eat any meat, fish, poultry, what have you. The idea is that you arent killing anything to eat. However, many veggies also regularly enjoy fishes.
Vegans do not kill anything to eat, and they also do not believe in using animals for man's benefit, thus no leather, products tested on animals, milk, what have you.
Each person has their own little set of rules to what they do and do not eat. I know lots of vegetarians who prefer not to eat eggs but have no problem with milk and cheese, and I know plenty who will eat shell fish but not regular fish, or pose certain limits to what kind of produce they can eat (organic/not)
This is really up to the individual, but the strict definitions are out there.

Yes vegetarians eat dairy products. Many try to get them from a farmers market or something so they don't support factory farming. Free range/cage free is a myth. Check my sources.
