This week I checked out two vegan cookbooks from the library-- "The Voluptuous Vegan" and "How it all Vegan!" I've only thumbed through the first a few times. However, the second uses real recipes with real ingredients. What I saw in the first one seemed to use too much stuff that wasn't everyday. Also, try doing some Internet searches. The sites below should be of some help.
Before buying one, go to the library and see what you can find. There are a few more at my library that I want to look at next. I also want to go to the downtown city library branch to look for more. I like "How it All Vegan!" to the point that I want to find it at a used bookstore. (I rarely buy new.)
As has been said, a cookbook is a waste of money if it's not used. I have an old copy paper box full of cookbooks, most of which I don't use. Fortunately, I got most of them free and some of them, like the Better Homes and Gardens one I'm keeping becasue my mother gave that to me my last Chirstmas at home before I married. (Likewise with the church cookbook from the church where I spent most of my growing up years.) The rest are either going to be recycled or put in a rummage sale.
Also, go to the bookstore with your mother to find something you both like and will use. In terms of just going meatless, it's not that hard, all you have to do is elimiate the meat in most recipes. My MIL made that comment about finding stuff for my SIL to eat. Well, they are a typical meat heavy family, so I can see why she thinks that way.
I hope this has been of some help.
I suggest two books:
To study your new found life:
Becoming Vegetarian - Vesanto Melina
and
To create great recipes:
Vegan with a Vengence - Isa Moskowitz
these two books will help you along your journey! i did for me and im going 6 years strong and healthy.. the void of not understanding your diet can suck..
Passionate Vegetarian, by Crescent Dragonwagon, is the one that I've used most. There's also Vegetarian Planet and How to Cook Everything Vegetarian. My best advice is to go to the book store, find the vegetarian cookbook section, and buy the one that looks the best to you. Browse some recipes and see what appeals.
Just remember that if you don't use it, any cookbook is a waste of money. Choose one that has recipes that are compatible with your taste preferences and abilities.
My all time favorite is Heidi Swanson's Super Natural Cooking. Here is the link to it on amazon.com:

Other classic vegetarian cookbooks would include the following:
The Moosewood Cookbook - by Molly Katzen
Local Flavors -by Deborah Madison
You can find them on amazon or at any bookstore; all of the above are popular, fun and easy to use vegetarian cookbooks.
Hope this helps!
The original Moosewood cookbook is a classic. I also second the first poster's answer. "The New Becoming Vegetarian" is great for veg nutrition info and you can't beat "Vegan with a Vengeance" for the food. It is, hands down, my all-time favorite cookbook. Isa's new one, "Veganomicon" is super as well.
I hear Veganicom is good.
