Question about 'Ener-G' egg replacement product?!
Answers: I made corn muffins this morning from a box of instant corn muffin mix ('Jiffy' muffin mix). I added the Ener-G equivelant of one egg. The muffins rose beautifully and taste good, but the texture is dry and crumbly. What can I add to make them more tender? More Ener-G mix? Oil? Applesauce?
I have used Ener-G egg replacer in a lot of recipes and it seems to work really well in certain recipes and not as well in others. But there are other ways to replace eggs that may work better for certain baked goods. I've had luck using tofu in place of eggs...try using 1/4 cup to replace one egg. You can also use applesauce, banana, etc. but keep in mind that you may taste some of the flavor of these fruits in the finished product. Hope this helps!
I'm a vegetarian, partially vegan.. I'm not familiar with Ener-G. But I have heard of people using applesauce or tofu to replace eggs in a recipe altogether.
Corn bread is supposed to be dry, so I'm not really sure it's the fault of the replacer.
At any rate adding butter might help. Earth Balance makes a wonderful vegan butter.

ive used the Ener-G egg replacement several times and it works perfectly without making the anything dry. you may want to add extra moiste liquids to the recipe next time. if the recipe calls for vegetable oil you can try to add just a tad bit more, and see how that affects your product.
Well, cornbread tends to be crumbly, as someone else mentioned. But be sure you mix the Ener-G Egg Replacer with the water BEFORE you add it to the batter. Maybe cook it at a slightly lower temp or add more oil/margarine to the mix.
