usually i roast some seasonal veggies, in light oil & with a sprinkling of black pepper & a tiny bit of rock salt.
i don't eat quorn or anything like that, to me it's a waste of time eating processed food designed for the newly converted, as they move away from the Meat & 2 Veg, idea.
i make up some stuffing, mix in soaked/cooked pulses & chopped nuts, cooked at the same time as the roasted veggies.
when it's done, slice it, pour over some roast vegetable gravy.
& you can still make yorkshire puddings, too.
who said being veggie, ruins sunday roast?
oh yum..................................
it's making me hungry.
roll on sunday.
;-)

& ur welcome

Well my mom usually cooks us something that is strictly vegan. but we usually eat soy burgers or soy hot dogs and they are actually pretty good

depends what you like eating,
I don't think you can replace the actual 'chickeny-ness' of chicken, but you can still have the veg/potatoes/ stuffing maybe with a nut-roast or some other proteiny thing??

Quorn mince , I honestly think it is better than chicken

I have roast pots, veggies, Yorkshire puds, gravy and a Quorn roast. It tastes just like chicken to me. Tho i haven't had real chicken for 20 yrs. I take it out of its wrapper and bung it in a roasting bag with a splosh of white wine, olive oil, a few chunks of onion and some fresh herbs! Yum! And you can have it cold in sandwiches the next day!

Sundays aren't my big dinner nights....but this is what I would make (I made it for my guy 2 nights ago).

Breaded and fried tofu Parmesan (I get breadcrumbs, garlic powder, dried basil and oregano, dried onion)
Dip tofu in rice milk and coat, then fry in some oil.

Once done I put a little tomato sauce and vegan cheese and throw it under the broiler
I serve that with garlic mashed potatoes, soya sauce and ginger veggies (just stir fry them in soya and ginger paste) and a spinach salad (I put avocado and almonds on mine, with Dijon mustard mixed with some olive oil and vinegar)

Perfect.

You could also make a tofurkey.

Lasagna linguini kale pizza dandelion greens spinach colards rice salad carrots lettuce cucumbers radishes olives tomatos bell peppers sauerkraut cabbage broccoli tortillas pie cake apples pears bananas pineapples nectarines tangerines oranges flatbread pasta lemon salad dressing ketchup pudding ice cream whipped cream tofu sunflower seeds peanut cashews almonds chestnuts kidney beans black-eyed peas lime squash zuchinni dip cow's milk goat's milk cheese foccasia white bread whole wheat bread celery crackers biscuits chapatis pumkin oats parathas garlic ginger cherries strawberries blackberries blueberries walnuts pecans mushrooms...

I'm not veggie but I do eat a lot of veggie meals, more so than meat meals, I do the roast potatoes and often buy nut roast, or veggie patties to go with it.

if you are vegan you cant eat quorn because it has egg in it. but if you are veggie then the quorn roast is beautiful.

It varies, but last Sunday I made fake meat loaf with Redwoods vegan 'mince', roast potatoes, brussell sprouts, cauliflower, peas and gravy.

I often roast tofu which has been marinaded too, and occasionally make a nut roast and vegan stuffing .

I eat the same thing I eat Monday through Saturday, whatever I feel like.

This Sunday - I am planning on some chili (totally vegetables since I never did like meat in my chili), corn bread, maybe a salad if I feel like it. If you really want something good and different - try putting the chil on top of the noodles of your choice, really good.

Along with that I have on hand lots of fruit - grapefruit is on sale right now in my area, so have LOTS of it. Blueberries were also on sale and bought some.

Might make a cake - who knows - desert is the last thing I think of since I have the soy ice cream in the freezer.

If I don't feel like cooking - and I have people come over that are wanting to watch the football game - I got pizza (vegetarian) in the freezer. I am good to go no matter what way I decide to go.

Fish or seafood when I'm home. Grilled or steamed in parchment with herbs and butter and grilled or roasted veggies from my garden. Finish off with a good dollop of homemade ice cream.

We have Quorn roast. ?
