Ratatouille's super easy and there's a great movie to follow the dish!

Chop up half an onion and a couple cloves of garlic along with some red bell pepper, zuccini and maybe some button mushrooms. Also chop up 3 fresh tomatoes.

Cook the onion and garlic in a pan with a little olive oil on high heat. Turn it down to low after it all browns. Add the tomatoes and let it cook down for about 15 minutes. Throw in the rest of the ingredients for another 5 minutes plus a load of salt and pepper, and voila, you've got some classic French cuisine.

Traditionally you dont serve it with pasta, but if you're hungry I'd definitely throw it on some spaghetti with a little parmesan. Maybe add a baguette to make it real Frenchie. French, afterall, is the language of loooove. Oh yeah, babeh!

You could make him a Thai curry. The easiest way is to buy the jar of curry because it usually has a receipe on the label.

In case it doesn't, just heat a can of coconut milk for about 2 minutes (Keep the heat only on medium high, don't let it bubble too much!) then stir in about a table spoon of the curry. Add a pinch of sugar, six shakes of fish sause, tofu and vegetables. Best ones are bok choy, onion, green pepper and egg plant, but you can really use anything you like. Stir in some bamboo shoots (from a can) and a few basil leaves. Serve with rice.

Ok, that sounded more complicated than I thought it would, but really it's not hard to make and it's soo yummy!

Hearty Vegetable Lasagna

Ingredients

* 1 (16 ounce) package lasagna noodles
* 1 pound fresh mushrooms, sliced
* 3/4 cup chopped green bell pepper
* 3/4 cup chopped onion
* 3 cloves garlic, minced
* 2 tablespoons vegetable oil
* 2 (26 ounce) jars pasta sauce
* 1 teaspoon dried basil
* 1 (15 ounce) container part-skim ricotta cheese
* 4 cups shredded mozzarella cheese
* 2 eggs
* 1/2 cup grated Parmesan cheese


DIRECTIONS

1. Cook the lasagna noodles in a large pot of boiling water for 10 minutes, or until al dente. Rinse with cold water, and drain.
2. In a large saucepan, cook and stir mushrooms, green peppers, onion, and garlic in oil. Stir in pasta sauce and basil; bring to a boil. Reduce heat, and simmer 15 minutes.
3. Mix together ricotta, 2 cups mozzarella cheese, and eggs.
4. Preheat oven to 350 degrees F (175 degrees C). Spread 1 cup tomato sauce into the bottom of a greased 9x13 inch baking dish. Layer 1/2 each, lasagna noodles, ricotta mix, sauce, and Parmesan cheese. Repeat layering, and top with remaining 2 cups mozzarella cheese.
5. Bake, uncovered, for 40 minutes. Let stand 15 minutes before serving.

Veggie Stir fry and rice- cant mess that up!

How about some pasta with stewed tomatoes, basil and some mushrooms? Very easy, and tasty!

Try fried rice- just sautee some vegetables (carrots, corn, peas, peppers, bean sprouts, mushrooms, celery, whatever) with soy sauce and a few drops of sesame oil. You don't want too much because sesame oil is very strong. Sesame seeds work too. Break an egg into the pan and keep stirring until the egg is cooked; it should look like little bits of scrambled egg. Now add rice and continue cooking until the rice is hot. A one pan dinner.

for v day, ask your lover to help you in the kitchen! - that would be fun and it does and cool! maybe he can help you with the veggie things and tell about the foods he likes!

if you are not a good cook try this.

grill veggie, like tomatoes, bellpeers, onions, zuccine, garic, and put them on pizzza base, put some cheese on top and stick it on the oven till the cheese is melted.

- you have veggie pizza, - do a salad with spinah, peeled organge slices, almonds

do a dessert like chocolate cake!

Roast a Tofurky glazed with unsalted churned butter seasoned with ground red, green, white and black peppercorns, top with chopped coriander.

Roast potatoes with the skin on, seasoned with savory and sea salt.

Sautee snowpeas and portebello mushrooms and then toss with grape seed oil.

Prepare Dr.Oetker's Creme Caramel dessert first, and place it in the fridge because while you're preparing the meal, cooking, serving, eating, and washing the dishes the dessert will be set already.
Setting time for the dessert is three hours so you could prepare that in the morning and then cook the meal.

Honestly, the best thing you could do for him is not over-do it.
I hate it when people go out of their way for me. Try a nice mushroom soup, homemade. I had a recipe once, and if you cook everything right ( just don't get too much water in the mushrooms during cleaning ) it will turn out GREAT. If hes vegetarian, not vegan, try adding some beef cubes to it. Also, stop by your local fresh grocery store to make this stuff. All some parsley for garnish, or even mint.

Gargenburger Riblet, baked potato, vegetable and a salad.

Large can of Orgeta Green Peppers – rinse in cold water, use your fingers to tear down one side and remove all seeds and strings. Once cleaned, tear into strips and then add olive and minced garlic. Serve with Mexican food. To vegetarian refried beans add mild green sauce. Add soya kaas if desired. Make Spanish Rice – Far East and/or Rice-a-Roni makes it in a box, just add tomatoes. Fry corn tortillas and serve like a tostada – add lettuce, tomatoes, cheese to the top, cilantro.

How about a simple pasta dish and a delicious salad. If you don't mind being too many carbs, throw in some garlic bread.
