Can you tell me some of your vegetarian recipes?!
Fill large pasta bowls half-way with mixed baby greens. Add a bit of sliced red onion and some diced cucumbers.
Quickly saute broccoli, peapods and diced tofu or tempeh in toasted sesame oil. At the end throw in some cooked rice.
Dump the cooked veggie mix on the greens and dress it with a sesame dressing.
(I make my own dressing with equal parts soy sauce and cider vinegar. To that I add toasted sesame seeds, a spoonful of sugar, some fresh ginger, a couple cloves of crushed garlic and some cayenne.)
Answers: This takes about ten minutes to put together and is my fall back recipe when I've had a long day.

also a simple recipe I made today in the mircowave:
cooked spaghetti squash + spaghetti sauce + vegan meatballs +a pinch of sugar + a dash of Tabasco + microwave in 2-3 minutes = delicious

Easy Tofu Lo Mein
INGREDIENTS
* 1 (16 ounce) package extra firm tofu
* 2 tablespoons olive oil
* 2 (3 ounce) packages Oriental flavored ramen noodles
* 1 (16 ounce) package frozen stir-fry vegetables
* 1 1/2 cups water
* 1 tablespoon soy sauce, or to taste
DIRECTIONS
1. Press tofu between paper towels to remove some of the water; cut in to bite size cubes. Heat olive oil in large skillet over medium-high heat. Add tofu, and fry until golden brown, about 15 minutes. Stir occasionally to prevent burning.
2. Meanwhile bring water to a boil in a medium saucepan. Add noodles from ramen packages, reserving the seasoning envelopes. Boil for about 2 minutes, just until the noodles break apart. Drain.
3. Add the stir-fry vegetables to the pan with the tofu, and season with the ramen noodle seasoning packet. Cook, stirring occasionally until vegetables are tender, but not mushy. Add noodles, and stir to blend. Season with soy sauce to taste and serve.
Wilted Romaine Lettuce
3 small bunches (or 2 medium bunches of Romaine lettuce)
2 medium onions, chopped
2 tsp minced garlic
1/2 lb mushrooms sliced or quartered
Fried, drained bacon bits (optional) or
1/2 lb fried, drained Tofu cubes (optional)
You can fix this in a large skillet or a very large saucepan....
Saute the tofu separately (or the bacon first). Then saute the onions and the garlic and the mushrooms and add the tofu (or bacon). Drain off excess frying oil but leave some in for flavor. Wash Romaine lettuce leaves and separate them.Put the Romaine lettuce leaves in the skillet.Put enough apple cider vinegar to go up 1/4 of the side of the skillet , then add water so that the skillet has 1/2 full of vinegar water(ie equal vinegar and water). Simmer this covered, turning lettuce as needed with a large spoon..until the leaves are wilted thoroughly (the main vein of the leaves will be slightly crunchy..that is okay.) Serve hot.

I don't make vegetarian meals. My husband believes if there is no meat on the table then the meal is not ready yet. No meal, no meal. I don't eat anything but a small yogurt and a couple saltine crackers a day, I have a very serious digestive disorder. I can have liquids but no solid foods.
