Easy Vegetarian Meals?!
I was wondering if anyone knew of any website or forum with good EASY and SIMPLE vegetarian recipes. I find most to be a bit extravagant and I would like to find some that are good for a person like me who is on the go and prepacks meals. Thanks in advance!

Well :) how easy, how simple?
The veggie meat substitutes I use only when I have too.
I find simple to be stuff that doesn't require a lot of attention, and quick to be about 20 minutes.
I like preparing stuff ahead of time. Like on a lazy day I made chili or lasagna and freeze it in portions then just take it out and eat it for lunch or quick dinners.
Tofu stir fry is fast (I add, near the end, some soya sauce and some ginger and it rocks).
I make pots of beans and rice...then have that as side dishes.
You can crumble firm tofu and add veggies and any kind of sauce or soup to it....this is a great breakfast meal or dinner.
Pita pizzas, get a jar veggie spaghetti sauce and leave it in your fridge, then throw some sauce, veggies and veggie cheese or real cheese if you eat dairy and pop it in the oven....
Cut up some veggie burger and fry some veggies and throw it in a pita pocket with hummus or your fav. dressing and some lettuce or spinach (one of my guys favs...)
I try (like today) to make things ahead of time. I make quinoa and leave it in my fridge, then have it as a salad (curry dressing, spinach, veggies) or heat it up with any kind of sauce with some tofu or veggies on the side.....
And soups, soup with a tomato sandwich or grilled veggie sandwich is great.
Oh and my guy likes veggie meatballs (you can make them or buy them frozen) and he makes veggie meat ball subs with spaghetti sauce and cheese....some fries on the side

I'm not a vegetarian but I love the MorningStar meals like the fake bacon, corn dogs, and my personal favorite, buffalo wings! There super easy to make and take on the go. And they're 100% vegetarian.

i don't know of any vegetarian meal sites, but I can offer you an awesome recipe.
brush some tofu with some olive oil, and grill it over an open flame. While you grill that, take some tin foil and put some olive oil on it, and then put some sliced red and green bell peppers and sliced onions in the foil. seal the foil and place it directly on the grill. When your tofu is done, your veggies will be done.

Sweet potatoes boiled, packed soy products(morningstar and boca), zucchinni boats(type in google and you'll for sure find the recipe), make your own vegetable and tofu soup with vegetable stock, omelets, Lentil loaf(also type in google to find recipe). If these dont help try looking for vegetarian cookbooks esp the ones for kids they're easy and simple. Infact, that's where I got the Lentil Loaf recipe and it also shows you how to make simple boiled eggs. I bet any vegetarian book shows you that! good luck!
I'm a vegetarian (a poor vegetarian) and I never have time for cooking (or the skills) and I'm always taking lunch to work. I live off of three things for the most part which I've found to be the most cost efficient and easiest things to make without getting too boring.
1. Burritos, just a big tortilla, black beans and rice and whatever I feel like mixing in at the time. Pretty much anything is good in a burrito if you've got good hot sauce :-) Wrap it in foil and you're good to go.
2. Pasta, but get creative. Mixing in ANY kid of veggie is always tasty and changes it up a bit. My favorites are artichokes and spinach with a cheap tomato sauce over penne, always impressive for guests. Oh that and try mixing in any of whole foods jarred bruchettas with plain tomato sauce, and it tastes amazing. Like you totally ordered out....
And 3. Salads and Salad wraps. Same as the other two, kinda boring until you get creative with it. Add nuts, and fruits and all kinds of veggies with a killer dressing and again, its just like you've ordered out.
So, I don't think I really answered your question, but... I'm working hard for my 2 points. Hope this helps you out a bit.
I, too, find many vegetarian and vegan recipes to be ridiculously complicated--plus, an inordinate number seem to call for a food processor. To keep it simple, stick to things such as:
-beans and rice
-steamed vegetables
-pasta
-salads
-hummus (as a dip or sandwich spread)
-peanut butter
-stir-fried vegetables with packaged sauces
-whole fruits
-baked or fried tofu
-frozen meat substitutes
Veggie food doesn't have to be fancy. Most cookbooks will try to make you feel guilty for not making hummus and black bean sauce from scratch, but there's nothing wrong with pre-prepared sauces; they're such a time-saver.
