Question: I'm not a vegetarian myself, but I don't think that every meal I serve to my family needs to have meat. The only vegetarian recipes I can find are meatless versions of what I normally serve (i.e.: meatless lasagna, sandwich wraps, et cetera...). Where can I find vegetarian dishes that are unique?

how about vegan lumpia? Lumpia is a Filipino egg roll.
1 package Morning Glory meatless meat
1 can of sliced water chestnuts
1/2 cup of baby carrots
1 package of thin egg roll wrappers
1 onion
3 pieces of garlic
frying oil
Onion powder, garlic powder, sesame seeds, 2 pinches of rock salt, and pepper (or to taste)
1 egg, or if going totally vegan, then use some rice flour and water for the paste.

In a food processor, process the onions, garlic, carrots and water chestnuts. Combine in a bowl with the soy meat. Add seasoning to taste. Make sure to combine well. Add about 2 tablespoons (more or less depending on the size of your egg roll wrappers) of the mixture to a wrapper. Roll it partially from the bottom, then fold in sides. Continue to roll until it is closed. Take an egg, empty into a small bowl or cup and beat with fork. Dip finger in egg and use to seal the wrapper. If going totally vegan, you can use rice flour. Take a small cup and add some rice flour. Add a little water and blend until a paste is formed. The trick is not too runny and not too thick. When it is sealed, set it to the side until it dries. If you plan on making a lot, then finish making them first, then fry. When frying, you don't need to fry too long, since the meat is already cooked. Just fry until the wrapper is a nice golden brown. Enjoy with sweet and sour sauce or banana sauce.
