Pumpkin Pie Pancakes (from "Vegan Planet"):

1 ? cups unbleached all-purpose flour
3 Tablespoons sugar
1 Tablespoon baking powder
? teaspoon salt
? teaspoon pumpkin pie spice
1 ? cups soy milk or other non-dairy milk
1/3 cup canned pumpkin
1 Tablespoon corn oil

In a large bowl, combine the flour, sugar, baking powder, salt, and pumpkin pie spice and set aside.

In a food processor or blender, combine the soy milk, canned pumpkin, and corn oil and process until well blended. Pour the wet ingredients into the dry ingredients, mixing with a few swift strokes until just combined.

Use a skillet to make pancakes as you would with regular pancake batter.

if you mean like egg whites.....then here's what i LOVE...and it's low in fat.. scramble sum egg whites and put them on a toasted bagel or any other bread u want i guess...then place a low fat slice of cheese on top and put the other half of the bagel on top.....it's soooooo yummy! hope i helped!! ;)

This is my favorite cookie recipe ever, eggless or not.

Vegan Cinnamon Oatmeal Raisin Cookies

* 1 cup vegan margarine
* 2 cups turbinado sugar (1 cup brown sugar and 1 cup white sugar works too)
* 2 tsp vanilla
* 2 tbs rice or soy milk
* 6 tbs apple sauce

* 2 cup flour
* 1 tsp baking soda
* 1 tsp baking powder
* 1 tsp salt
* 2 tsp cinnamon

* 2 cups oats
* 1 cup raisins


1) Preheat oven to 350 degrees.
2) Combine margarine and the sugars and beat until creamy.
3) Add in vanilla, rice milk, and apple sauce and beat some more until it's all distributed evenly and creamy and yummy.
4) In a separate bowl, combine the flour, baking soda, baking powder, salt, and cinnamon until they're all mixed together evenly.
5) Add the dry ingredients and the wet ingredients and mix together until all is well.
6) Add the oats and raisins and mix 'em in.
7) Evenly place clumps of cookie dough on an ungreased cookie sheet (I use parchment paper. It’s amazing and I don’t even have to wash the cookie sheets after. I got it at walmart.)
8) Put in the oven and back for about 8-10 minutes, until they no longer look raw, even in the middles.
9) Eat!

You can bake without eggs. You can use apple sauce in baking (i.e. muffins, cake) or use Ener-G egg replacer for cookies or other baked goods. It works really well.


My favourite eggless recipe is biscuits:

2 cups whole wheat flour (you can use white or rice flour too)
3 tsp baking powder
1 tsp salt
1/3 cup olive oil (I use extra virgin)
2/3 cup soy milk

Combine dry ingredients, then add the rest and mix until combined.
Roll dough to 1/2 inch thick, and cut out circles and place on greased baking sheet.
Bake for about 10 minutes at 425 degrees, until golden patches appear.


Very yummy!
