I am a former chef and have worked in Asia, and for me an naturally brewed one without chemicals, Kikkoman is great, Tamari is even better it is made naturally too and with wheat, not soya and chemicals.
It is not as salty but has a more complex flavour and lighter taste in cooked foods.
