Vegetarian Baking...?!

Question: Hey guys, I'm a vegetarian, but I also enjoy baking but most recipes require eggs which is absolutely not allowed at my house. Dairy products are perfectly fine, but no eggs. I would like to make a cake thats fluffy and softly chewable. *Chocolate perferable* :-D

Its an amazing recipe. I don't exactly remember how fluffy it is since I made it a year ago, but everyone went crazy over it. I'll look up some more vegan ones for you, but wanted to share that right away. There are a lot of vegan food blogs that have amazing desserts if you're curious (Veganyumyum comes to mind).

Here are ones that are definitely more fluffy according to PPKers: http://www.pakupaku.info/sweets/mixnmatc...

I would suggest you go more for already vegan recipes when it comes to cakes because they tend to be less forgiving than other baked goods. If you're really interested, there is Vegan Cupcakes Take Over The World and various other cookbooks out there that take the guessing out of it.

Try an egg replacer. I used some last night and it was great.

You can use ground flax seed, but I find it doesn't work so well.
I you find that it sometimes a little off, add some pure chocolate chips to your chocolate cake :)

Good luck

I know that you can substitute a banana for eggs, but I don't know how good that would taste in a cake. Tastes great in pancakes though! Otherwise there is a product called ener-g egg replacer that is vegetarian. I have never tried it though, so I'm not sure how well it works.

Soda. Seriously. Find a good, eggless mix, add a can of your favorite soda (dark colas for dark cakes, clear sodas for light) and bam. A really freaking good cake with no eggs, milk or oil. Amazing.
