I just got my first food processor. Any ideas for great vegetarian mixes?!


Question: I've used mine for making hummus of all kinds....yum! I've never tried making baba ghannouj, but it's on my "to-do" list. I've also used mine frequently to make various bean soups....look for some recipes for some great navy bean soup or black bean soup.

By the way, you can make hummus with black beans as well as chick peas....and it's really good. Or try it with some spinach ground into it.

You can make the most Kick *ss chuncky fresh salsas with a food processor. Good luck.

Pesto and Gazpacho are my two favorites!

Pesto

2 cups fresh basil
1 cup fresh Italian parsley
1/2 cup Parmesan or romano cheese, grated
1/2 cup pine nuts, toasted
4 garlic cloves, roughly chopped
1/4 teaspoon salt
1/8 teaspoon red pepper flakes
1/2 cup olive oil
1 tablespoon lemon juice
2 tablespoons water

Combine all ingredients in a food processor or blender. Puree until the mixture forms a smooth, thick paste.

Gazpacho

1 hothouse cucumber, halved and seeded, but not peeled
2 red bell peppers, cored and seeded
4 plum tomatoes
1 red onion
3 garlic cloves, minced
23 ounces tomato juice (3 cups)
1/4 cup white wine vinegar
1/4 cup good olive oil
1/2 tablespoon kosher salt
1 teaspoons freshly ground black pepper

Roughly chop the cucumbers, bell peppers, tomatoes, and red onions into 1-inch cubes. Put each vegetable separately into a food processor fitted with a steel blade and pulse until it is coarsely chopped. Do not overprocess!

After each vegetable is processed, combine them in a large bowl and add the garlic, tomato juice, vinegar, olive oil, salt, and pepper. Mix well and chill before serving. The longer gazpacho sits, the more the flavors develop.
