My best Friend is a vegetarian, I'm not. She is coming home to visit and I want to make her a special meal?!
Any ideas? ... keep in mind that I'm not *that* great in the kitchen so if it is crazy complicated I won't be able to do it.

Answers: What are some tried and true favorites? I missed her a bunch and I really want to make her visiting special, and nobody she knows is a vegetarian so she always ends up the odd one out with meals and I want to make her a special meal just for her.

Try making moussaka, but instead of using beef, use lentils, onion and a little garlic. Fry it off, add cumin, oregano and tomato paste, and layer it on the bottom of a pie dish.
Layer sliced aubergine, par-boiled potatoes, and then tomato slices on top, and cover the lot in bechamel sauce.
Bake it for 30mins and you will get the MOST delicious meal ever! (And it's really low calorie too!)
try making veggie lasagna I am a meat eater and I made this once it had artichokes for the meat it was a great recipe look it up as lasagna with artichokes instead of meat.
Vegetarian Lasagna is super easy to make. There are so many great recipes on the web. I particularly like the ones with zuchinni in them.
Vegetarian Chili and Corn Bread is yummy.
Pasta is always good, and easy too. You can basically buy everything you need and just put it in a pot! For example just buy a can of pasta sauce (tomato based ones are always good) and a bag of dried pasta, and follow the instructions on the packet! And to make it look appealing, garnish it with some freshly grated parmesan cheese and some fresh herbs.

A curry is a great way to go.....Buy a bag of frozen, organic thai or chinese style veggies, a can of coconut milk and a bottle of curry paste. Start off by cooking a little garlic and onions just till soft, then add the bag of veggies, the coconut milk and just a teaspoon of the paste. Add some veggie stock or water to thin it out if desired, maybe a little soy sauce for flavor and let it cook for a few minutes till the veggies are warmed, serve over jasmine rice and sprinkle a little cilantro on top....works for vegetarians all the time.
try making this you make penne pasta and add your favorite vegetable pour mushroom alfredo over it place in a baking dish and cover with italian cheese serve with bread.

I'd ask your friend what vegetables they hate: even vegetarians have favourite/least favourite vegetables. A simple, informal feast is a selection of crudites (raw vegetables) with a big bowl of hummus. Then I wouldn't worry too much about the cuisine: it's the company that's important.
Alcohol also helps.

There are now loads of vegetarian dishes at the shops,and they are all lovely! Go to the veggie section in the shops, I love the creamy mushroom pies, or the lamb style grills. You could make her a "meat" dish but with veggie lamb, or a pie with something. Or you could make her chicken style piecies in a nice stir fry with noodles.
