Mac n'Cheese
Not just the box kind...
The homemade kind.
That way it'll be somewhat challenging but, not too hard.
And COMPLETELY delicious.

1 1/2 c. elbow macaroni
4 tbsp. butter, divided
1/4 c. all purpose flour
3 c. milk
1 tsp. dry mustard
3/4 tsp. salt
1/4 tsp. freshly ground pepper
1 1/2 c. shredded sharp cheddar cheese
1/4 c. freshly grated Parmesan cheese
1/3 c. plain dry bread crumbs

Preheat oven to 375 degrees. Cook macaroni in boiling salted water in large saucepan just until tender, about 8 minutes. Drain and rinse under cold water.
Meanwhile, melt 2 tablespoons butter in large saucepan over medium heat. Stir in flour and cook, stirring 1 minute. Gradually whisk in milk, mustard, salt and peppers. Bring to boil, whisking. Boil 1 minute. Remove from heat and whip in cheeses until melted and smooth. Stir in drained macaroni. Pour into shallow 2 quart baking dish. Melt remaining 2 tablespoons butter, stir in bread crumbs and sprinkle over macaroni. Bake 30 minutes. Let stand 10 minutes.

Makes 8 servings.

make a chocolate frosted apple with chocolate bars...
take some diced chocolate and put it in a round and open bowl. put in the microwave for a few seconds, untill melt. then dip the apple in the chocolate, paying atention covering it completely. put it in the refrigerator for 5 minutes or untill the chocolate firmup again. i think it's fun and delicious as a break!!
or if you like chocolate dessert try this recipes:
-4 mars candy bar (or another candy bar...but must contain CARAMEL!)
-rice crispies
cut the mars into small pieces, put in a large and open plastic container, put in the microwave untill melt. add the rice crispies and stirr gently without croush the cereals. shape it in the container. let the mars firmup in the refrigerator...then cut it into small squared pieces and enjoy!

Tomato Rice with Herbs

This simple combination of rice, boil in a 2-litre/quart saucepan over herbs, and tomato with an Italian flavour can also be used as an alternative stuffing for baked peppers.

PREPARATION TIME: 5 minutes
COOKING TIME: 25 - 35 minutes
YIELD: enough for 4 persons


1 cup basmati or other long-grain white rice
1 3/4 cups water
1 teaspoon salt
1 teaspoon paprika
1 tablespoon tomato paste
2 tablespoons fresh basil leaves, chopped fine
2 tablespoons olive oil
1/2 teaspoon yellow asafoetida powder
1 cup firm tomatoes, cut into 1.25 cm (1/2-inch) cubes
2 tablespoons finely chopped fresh parsley


Wash, drain, and dry the rice.

Bring the water, salt, paprika, tomato paste, and basil slowly to a boil in a 2-litre/quart saucepan over moderate heat.

Heat the olive oil in a non-sticking 2-litre/quart saucepan over moderately low heat. Saute the asafoetida in the hot ghee. Add the rice and stir fry for about 2 minutes or until the rice grains turn whitish.

Pour in the boiling water. Stir, raise the heat to high, and bring the water to a full boil. Immediately reduce the heat to low, cover with a tight-fitting lid, and gently simmer, without stirring, for 15 - 20 minutes or until all the water has been absorbed and the rice is tender and flaky.

Remove the rice from the heat and allow it to steam for 5 minutes with the lid on. Finally, fold in the tomatoes and fresh parsley and serve immediately.

Potato Cakes

Ingredients:
500g (1 lb) cooked potatoes, mashed
30g (1 oz) butter
2 tsp salt
100g (4 oz) flour

Directions:

Add the butter and salt to the potatoes and work in the flour. Knead the dough until it forms a ball. Roll the dough on a floured board to a thickness of 1/2 cm (1/4 in). Cut circle shapes using a plate. Cut these circles into 4 quadrants.

Cook on a hot oiled pan till both sides are brown.

Delicious served with butter.

Stuffed Peppers

Ingredients:
2 peppers
3 cups of cooked rice
2 tablespoons of olive oil
1 medium onion
2-3 cloves of garlic (crushed)
2 tablespoons of pine nuts
1 tablespoon of pesto
grated mozarella and cheddar

Directions:

Slice the peppers lengthwise and remove the seeds. Place on a baking tray.

Fry the onion and garlic in the olive oil for five minutes. Add in the pine nuts and fry until the onion is soft.

Remove from the heat and stir in the rice, pesto and grated cheese.

Fill the peppers with the mixture and bake in a moderate oven until pepper flesh is soft.
