How do I make marshmallows using agar agar powder?!


Question: The agar sets in the mixing bowl before I add the hot sugar mix (is it too strong or should I heat the mixing bowl?) and then it doesn't fluff up even after 25 mins mixing on high (maybe my mixmaster isn't powerful enough as well).
Any help gratefully received as I'm trying to impress my vegan daughter. Two flops so far!

Was your agar agar mixture clear when you added it? That's really the only way to tell if it's completely dissolved, otherwise it doesn't work. (It won't bind to the sugar correctly to hold the whip.)

Try softening the agar in cold water first, then simmer until clear.

(It's really tricky to make vegan marshmallows, which is pretty much why you can't find them. It's so nice of you to try.)
