Really really easy vegetarian recipes?!


Question: I am a vegetarian, but I am a self-confessed lazy one I'm afraid! I don't tend to cook dinners, beyond the simple things like pasta and vegetarian convenience food. I really want to do something about this, because I'm sure it's not the healthiest way. I have been looking on the Vegetarian Society website, but all of their suggestions contain reams and reams of ingredients - I just don't have the time or skills for this!
Could vegetarians please give me their favourite and simplest dinner ideas? Thank you!

Bake some potatoes
Meanwhile fry some onions and mushrooms to how you like them.
when potatoes are done cut in half scoop out filling place in bowl with onion mushroom mix add a tin of baked beans (if you use cheaper beans you may need to drain off some liquid first) stir together. Divide mixture evenly between the skins top with grated cheese and pop under the grill
So simple yet oh so nice and you can add your own touches to personalise it (meaties can add bacon sausage etc)

Get Vegetarian Cooking for Dummies. Its a good book. I'm pretty sure thats the title. It has a lot of recipes and they look really good! Good Luck!

If you don't have the money to spend on the book for any reason, check it out from the library, thats what I did!

cauliflower cheese.

boil some water for the cauli
meanwhile make the sauce i.e. make a roux (flour / butter) add milk and a mature cheese, some pepper
add cauli when water is boiling and cook until crunchy

or a gratin dauphinoises if you can follow the french

what a shame being vegetarian however have a nice tomato and basil brushetta - cant get more simplier than that

Great stuff, and a WHOLE lot of recipes i usually keep in my kitchen. Even have some great recipes for Bagels, Cake, Pizza Crust.. stuff like that...
