Easy vegetarian recipes?!
Drinks: Strawberry banana smoothies
Appetizer: Light green salad with veggies
Main Course: ?
Dessert: Waffles with ice cream and fruit on top
What could I prepare for the main course? I'm only 14, so it has to be fairly simple... the only appliances I have access to are the toaster, microwave and blender. What shall I make?
P.S. In order to satisfy my meat-loving family, tofu and the like are probably a bad idea.
Thanks so much in advance! Any ideas are greatly appreciated.
Answers: I've agreed to make dinner for my family tomorrow night, and I'm at a loss for ideas. Only my brother and I are vegetarian, but I only want to prepare one dish, so it'd be easiest if it just didn't involve meat. So far this is what I have:

Appetizer: Light green salad with veggies
Main Course: ?
Dessert: Waffles with ice cream and fruit on top

I made this amazing pie with tofu once
a chocolate graham cracker crust
pie filling
one soft tofu pkg
8oz milk chocolate chips melted in microwave (10 seconds then stir)
one pkg cream cheese-softened
mix in blender or food processor till creamy
pour into pie crust then top with whipped topping and perhaps some shaved chocolate
How about eggplant parmesian?
