Any ideas for a tasty vegetarian Valentine's day meal?!


Question: Love the above idea for meatloaf & mashed potato - it's so homey!

If you want something a little fancier, you could try a red-themed dinner. How about...

Bocconcini (baby buffalo mozarella... comes in little white balls and absorbs vinegar or other flavour really well), fresh cherry tomato, fresh basil & avocado salad. Slice the bocconcini, quarter the tomatoes, and cube the avocado. Shred the fresh basil, and then make a vinaigrette (balsamic, olive oil, dried oregano & basil, a little salt).
OR
You could also do a baby spinach, pomegranate seed (food of the gods), mandarin segment salad, with a dijon, mayo, balsamic, olive oil & maple syrup dressing.

Then do a roasted red pepper soup - it's so bursting with flavour.

For a main dish, try finding some beautiful red pasta (I get mine from a speciality store - the pasta is dyed with natural dyes and has little extra flavour, so it won't interfere with your sauce), and do a really nice rose sauce (tomato & cream) with white wine.

For dessert, I'm sure you can think of something particularly appropriate for you two - obviously chocolate is a favourite, but you could also do a Red Velvet cake.

  • Mama's Mock Meatloaf
    Better than what mom used to make. Serve it with ketchup, mashed potatoes, and gravy.

    1 medium onion, diced
    1/2 green pepper, diced (optional)
    3 Tbsp. vegetable oil
    2 packages beef–flavor Gimme Lean Beef
    1/4 cup oatmeal, dry
    2 slices white bread, crumbled
    3 Tbsp. ketchup
    2 tsp. garlic salt
    1 tsp. pepper

    Coating ingredients:
    1/4 cup ketchup
    1/4 cup brown sugar
    1/2 tsp. dry mustard
    1/2 tsp. nutmeg

    ? Sauté the onion and green pepper in the oil over medium heat until soft. Combine in a bowl with the ground beef alternative, oatmeal, bread, ketchup, garlic salt, and pepper. Thoroughly mix with a spoon or your hands.
    ? Press the mixture into an oiled loaf pan. Cover with foil and bake at 375 degrees F for 30 minutes.
    ? Meanwhile, mix together the ingredients for the coating and set aside.
    ? Remove the loaf from the oven and turn it out onto a baking sheet. Spread the coating over the entire loaf. Cook, uncovered, for another 15 minutes.

    Creamy Chive Mashed Potatoes
    Rich mashed potatoes are the perfect side dish for most meals.

    5 large potatoes, diced
    1 cup liquid nondairy creamer (try Silk brand)
    2 Tbsp. margarine
    1/4 cup fresh chives, chopped
    Salt and pepper, to taste

    ? Place the potatoes in a large pot and cover with water. Bring to a boil and cook for 20 minutes.
    ? Drain the potatoes, place in a bowl with the remaining ingredients, and mix until smooth.
    ? Serve hot
    Brown Gravy
    Tired of plain potatoes? Whip up a batch of this creamy gravy, and serve it with your mashed potatoes and biscuits.

    2 Tbsp. (1/4 stick) margarine
    1 medium-sized onion, diced
    2 Tbsp. unbleached all-purpose flour
    1 tsp. garlic salt
    2 Tbsp. cornstarch
    1 1/2 cups water or vegetable broth
    1 tsp. yeast extract
    1-2 Tbsp. soy sauce or tamari
    Pepper, to taste

    ? Heat the margarine in a medium saucepan over medium heat.
    ? Sauté the onion for a few minutes, then add the flour and garlic salt and sauté for another 8 to 9 minutes.
    Dissolve the cornstarch in the water or broth.
    Gradually add the cornstarch mixture to the onion mixture, bring to a boil, then simmer for 10 minutes.
    ? Strain the gravy into a separate saucepan and add the yeast extract, soy sauce or tamari, and pepper. Simmer for another minute or 2, stirring constantly. Keep warm.

    Make a nice spinach lasagna or eggplant parmagiana with a green salad. Paired with a proper wine would be perfect.

    Take the meat of one fresh vegetarian and trim off the excess fat. Marinate the meat in a mixture of lemon zest, lemon juice, soy sauce, sugar and oregano for 2 to 24 hours ...

    C'mon, you knew that was coming.

    For real, try a broccoli and onion quiche.
