Healthy Vegan Waffles -
* 1 ripe banana, mashed
* 2 cups water
* 1/2 cup uncooked oatmeal
* 1-1/2 cups whole wheat flour
* 2 teaspoons baking powder
* 1 teaspoon cinnamon

* vanilla to taste (optional)

Mix banana and water. Add dry ingredients and mix, leaving lumps in batter (the lumps keep the waffles from becoming too rubbery when cooked). Cook on waffle iron. You can use the same batter to make pancakes*. I've also substituted soy milk for the water, which gives the vegan waffle a richer flavor; when I do this, I usually leave out the spices.

You must leave lumps in the batter. Vegan waffle or pancake batter which is too smooth will spread out very thin on the waffle iron or pan, and the result will be a rubbery, tough cake. The batter doesn't freeze well but can be refrigerated for a short time. Waffles can be made in large quantities and frozen for future use; this is a good option if your waffle iron is small! As shown, recipe makes roughly four waffles; the number of pancakes will vary according to size. Recipe can be doubled.

1 1/2 cups organic whole-wheat flour
2 cups water
1 large ripe banana
2 teaspoons baking powder

You've got a great few recipes so far.

I'd also suggest this recipe, it's very easy and I love it:

"Banana Pancakes

1 cup flour
2 tsp. baking powder
1 banana, mashed
1 1/4 cups soy milk
1 tbsp. sweetner
sliced fruit

In a large bowl, sift the flour and baking powder together. In a small bowl, mash the banana with a fork, add 1/4 cup of the milk, mixing together until there are no lumps. Add the banana, sweetner and remaining milk to the dry mix and stir together until just mixed. Then the steps are the same as the first recipe. "

What's great is that instead of the banana, you can substitute lots of fruits and gourds too - like I sometimes add in 1/2 a cup of sweetened pumpkin puree and pumpkin pie spice to pancakes I make in November. Or I add in 1/2 a cup of mashed blueberries when blueberries are in season. Or pureed apples and cinnamon in it's place.

Note: You might want to add some thickening agent like agar agar if you use a runnier fruit, bananas are more binding and they bring the recipe together.

It's a very flexible recipe :) Hope you enjoy.

EASY VEGAN PANCAKE RECIPE

1 cup flour
1 tbsp sugar
2 tbsp baking powder
1/8 tsp salt
1 cup water
2 tbsp oil
1/2 tsp vanilla extract (optional)

Makes 6-8 pancakes, depending on the size of each pancake. Fry in a pan or skillet at about 375 degrees. Flip when golden.

You can add fruit such as blueberries, bananas, apples, add nuts, carob chips or natural chocolate chips.

Baked Dutch Apple Pancake
Ingredients:
1/3 cup maple syrup (I used low calorie pancake syrup)
1/4 cup brown sugar
3 tablespoons vegan margarine
2 apples thinly sliced (I leave the skin on for extra fiber but it’s your choice)
1 egg made with EnerG egg substitute
3/4 cup soy milk
1 tablespoon vegan margarine
1 1/4 cup flour (I used whole wheat pastry flour)
4 tablespoons sugar or sweetener of your choice
2 teaspoons baking powder
1/4 teaspoon salt
1/3 cup applesauce

Directions:
Preheat oven to 400 degrees F. Combine maple syrup, brown sugar, and margarine in a 9 inch round baking pan. Put in the oven for about 5 minutes, until the butter melts. Remove and stir to dissolve the sugar.

Arrange apple slices, overlapping, over the syrup mixture in the pan. Set aside.

Whisk together the egg replacer, soy milk, applesauce and melted margarine.

In a medium bowl combine flour, sugar, baking powder and salt. Pour in the soy milk mixture and stir until smooth. Pour batter over the apples.

Bake for 20 to 25 minutes. Remove from oven and turn out onto a serving plate.

Serves: 4-6 servings
Preparation time: 45 minutes
