Anything put out by Moosewood Restaurant is always easy and delicious

it's an oldie called Laural's kitchen. I think it was the first all around vegetarian popular cookbook. It was first published in 1976, but it is still a great basic cookbook.

Veganomicon: The Ultimate Vegan Cookbook.

I love these book, as it is very easy to follow and great varity of foods. and there is really good humour in the book.

The 5 ingredient vegetarian gourmet by Nava Atlas is excellent and has simple, healthy recipes.

Vegetarian Cooking for Everyone by Deborah Madison is amazing, its huge and has recipes and information on every type of vegetable and vegetarian food, and a range of easy to difficult recipes.

I don't like the Moosewood books since most of those are more difficult and time consuming recipes.

Vegan with a Vengeance by Isa Chandra Moskowitz and Veganomicon by Isa and Terry Hope Romero.
