Gelatin substitutes?!

Agar-agar and carageenan are both great gelatin subs, and can be found at most health food, whole food, or asian stores. The ratio depends on the form you get. I prefer the powder of agar agar. I just use about 1 tsp per cup of liquid that I want to gel. You just heat your liquid, disolve the powder and mold it-it sets up firm in just minutes! Good stuff!

Agar agar also makes a super hair gel! Just liquify a little in hot water, rub between your palms and apply to hair. No chemicals, no garbage, and no animal testing!

It really depends on what you're trying to do in the recipe. If you're trying to thicken, there are all sorts of thickeners. If you're actually looking for jello, there are (accidentally) vegetarian gel snacks (koolaid brand cups, hunts brand cups.) ... what are you trying to do?
