Nah i think that's fine. Your diet doesn't seem "over loaded".
Breakfast:
1 cup of lemon green tea
(or a slice of bread with one tablespoon of peanut butter)
Lunch:
Nothing
(I can't do anything about it, i just don't have time to eat with so many dead lines....dang it high school!)
Snack:
A bowl of pasta (with a ton of veggies mixed in with substitue meat.)
1 glass of orange juice
1 glass of milk
Dinner
Rice with curry or tofu
Some times, i drink more green tea then usual or eat a cookie here and there.
Maybe if you had a little more variety for lunch you wouldn't feel as hungry at dinner.
Your breakfast, dinner and desert sound great but 2 large handfuls of nuts as well as a huge spoonful of peanut butter is a lot. Nuts are really good for you but they are high in fat which is why they recommend at most a handful a day.
You dinner sounds yum!
i ate home made - grilled veggie pizza. i had some nice vegan red wine.,
i also had a two mango, and some other wonderful stuff, oh i made vegan cupcakes, with icing. it was good!
Vegetarian.
Lets see.....
Breakfast:
I ate a bagel with Tofutti Cream Cheese
Rose Tea
Blueberries
Break at work:
Starbucks Soy Decaf Mocha Coffee
Banana
Second break at work:
Apple
(also make it a point to drink at least a liter of water a day while at work)
Snack while waiting on dinner to cook:
Avocado
Dinner:
TVP mixed in with noodles, tomato sauce, garlic, cilantro, onions, bell pepper, all mixed together, placed in a baking dish - then I put Soya Kaas Jalapeno Mexi 'cheese' on top - baked till all melted.
Mixed salad with herbs.
After dinner:
Glass of blueberry homemade wine from a friend
Before bed:
Soy choc. milk
6.00am – a 500ml green smoothie made from banana & spinach
8.30am – mango, apple & nectarine
10.30am – banana & blueberries
12.30pm – a mixed salad (carrot, beetroot, lettuce, avocado, tomatoes, cucumber etc…), followed by two dried dates for pudding.
2.30pm – mango & nectarine
4.30pm – a slice of birthday cake and an ice-bun (which I regretted because of the following heartburn caused by products being too sugary and too greasy)
6.30pm – still feeling full from the sugary and greasy cakes. So had plain crackers with avocado, a small piece of chocolate, plus several glasses of red wine and several glasses of water.
Pretty “average” day, although normally don’t eat birthday cake at 4.30. Glad it is a small office with not too many birthdays.
.

Cashews and coffee during morning and evening hours. Morning Star Burgers in the Afternoon,. Bean burritos every coulple weeks. Occasionally chese and olive and mushroom pizza. Drinks. Soda pops, occosinal tangerine juice.
for breakfast i typically have a morningstar sausage patty with a slice of cheese on a whole wheat mini bagel.
for lunch today i had an amy's pocket sandwich and a salad, but i typically only have something frozen once a week. i might make a sandwich of soy ham/turkey and cheese on wheat bread. or bring leftovers. on the weekends when i'm home i like to make wraps- wrap, morningstar chicken strips, salsa, cheese, lettuce.
for dinner i'm planning on gardenburger rib, mashed cauliflower and mixed veggies. i also made a casserole the other night of - whole grain egg noodles, beans, mixed veggies in a cream of celery soup. i love to make veggie chili- beans, salsa, tomatos, veggies, morningstar ground meat and chili powder!. i also like a veggie burger on wheat bread with cheese and a side of sweet potato fries!
