Easy breakfast recipe with house hold ingredients?!


Question: Are you vegetarian or vegan? Because my household ingredients will be different from yours if you are anything but vegan :)

I like crumbled and scrambled tofu, with veggies, and tomato and vegan cheese all fried together with toast...and a smoothie, I always have those items on hand.

I also like making vegan pancakes when my guy is here.

I love making breakfast sandwiches, when I ate eggs with cheese, and now with Slices of tofu fried then drizzled with apple cider vinegar, vegan cheese and tomato.

and what I eat every single day during the week....toast with peanut butter and homemade jam :)

Boiled eggs - eggs water

Pancakes - eggs, self-raising flour, butter, sugar, milk and whatever you can find in your household

Hash browns - grated potato, egg, butter, salt, pepper

French Toast - thick bread (cinnamon raisin is best) , soak in egg and milk, cinnamon for five minutes, gently fry in pan till brown on both sides.

Porridge - oats or semolina, water or milk

Banana crunch - yoghurt, corn or bran flakes, frozen banana, blend.

Muesli - soak oats overnight in milk or water, next day grate in apple add whatever fruit or berries you want, mix in yoghurt

Hot Dog - dog, microwave, bread

Well, I don't know what you generally keep in your house.

I boil quinoa grains for 10 minutes in juice with raisins and eat it like a high-protein porridge.

You can also make whole wheat pancakes
2 cups whole wheat flour
2 tsp baking powder
1 tsp salt
2 eggs - beaten
2 cups milk
2 tbsp canola oil
Berries, fruit, etc (optional)
Mix dry ingredients; mix wets and add to the dry ingredients. Dollop onto a greased and heated griddle/pan, flip once, then eat.

Banana French Toast

2 medium bananas
2/3 cup soymilk
2 tablespoons maple syrup
1/8 teaspoon ground cinnamon
4 slices bread

Hearty Hash Browns

1 medium onion, finely chopped
1 clove garlic, crushed
2 Tbsp. oil
2 large potatoes, grated
Salt and pepper, to taste

You can leave oput the onion and/or garlic if you prefer.

Vegan or vegetarian ingredients?
Dry or hot cereal with fortified milk alternative (such as soy milk, almond, rice, hemp, etc), with nuts and fruits on the side. Or you can have tofu scramble, or (vegan) pancakes/waffles with slices of tofu or tempeh 'bacon', vegan scones or muffins.

Asian Fruit Salad with Papaya-Mint Sauce

1/2 large cantaloupe, peeled, seeded, cut into 1/2-inch pieces (about 2 cups)
1 medium papaya, peeled, seeded, cut into 1/2-inch pieces (about 1 cup)
1/2 large pineapple, peeled, cored, cut into 1/2-inch pieces (about 2 cups)
1 11-ounce can peeled whole lychees in heavy syrup, drained, halved lengthwise
1/2 cup seedless green grapes, halved
1/2 cup seedless red grapes, halved
1/4 cup sweetened shredded or flaked coconut, toasted
Fresh mint sprigs

Mix first 6 ingredients in large bowl. (Can be made 4 hours ahead. Cover; chill.)



Papaya-Mint Sauce:
1 large papaya, peeled, seeded, coarsely chopped (about 1 1/2 cups)
3 tablespoons fresh lime juice
3 tablespoons fructose sugar
1 1/2 tablespoons coarsely chopped fresh mint

Puree all ingredients in processor until smooth. Transfer to bowl. Cover and refrigerate until ready to use. (Can be prepared 1 day ahead. Keep refrigerated.)

To Serve: Spoon fruit into 6 small bowls or goblets. Drizzle Papaya-Mint Sauce over fruit. Sprinkle with coconut. Garnish with mint.
