EGGLESS FRENCH TOAST

1/2 cup non-fat milk
1 tbsp cornstarch
1 tsp vanilla extract (or other extract of your choice)
2 slices (1 oz each) whole wheat bread
2 tsp reduced-calorie margarine, divided use

Combine milk, cornstarch and vanilla in a small bowl and stir until cornstarch is dissolved.

In a shallow pan, place bread slices and pour milk mixtures over the bread.

In a preheated nonstick skillet or griddle (on medium heat) melt 1 tsp. of the margarine. Then place bread in skillet or griddle and brown lightly. Turn bread over, adding remaining margarine and brown on the other side.

Serve hot. Sprinkle with cinnamon or maple syrup of topping of your choice.

Makes 2 slices

Here's a French toast recipe with no eggs or tofu.

1 1/2 cups water
3 Tbsp. soy flour or unbleached pastry flour
1 Tbsp. corn starch
1 Tbsp. organic sugar
1/4 tsp. almond extract
Pinch sea salt
Pinch cinnamon
2 Tbsp. organic coconut shortening (Spectrum), melted (can substitute with non-dairy margarine)
1/4 tsp. turmeric
French bread

Purée all ingredients in a blender. Put on stovetop and heat while whisking until thickened, remove from heat, and let cool slightly. Get some slices of great French bread. Let it soak in the batter. Heat a skillet and add a touch more coconut shortening or margarine, then brown the soaked bread on each side. Serve with maple syrup.

8 slices of thick bread
1 cup milk
1 cup grated cheese
1/4 cup flour
Tbl/sp butter
Powered sugar
salt to taste

Mix together the salt, milk, and flour and pass through a strainer.
Add the grated cheese
Dip slices of bread into the mixture and fry in the fat or butter on both sides in a frying pan.
Before serving, sprinkle with powdered sugar.

Its also nice with Almonds & Vanilla

I haven't personally tried it - but have you thought about using 'Ener-G egg Replacer'?

Since it works for everything else - seems like it would work as well for making french toast - or so it seems.

1 cup *vanilla* soy milk
2 Tbsp unbleached white flour
1 Tbsp Sugar or other dry sweetener
1 Tbsp nutritional yeast
1 tsp cinnammon
4 bread slices, try to use whole grain


Whisk first five ingredients together, and let rest for a few min., while you heat up a lightly greased skillet. The skillet is ready when you flick a drop of water on it, and it skitters across the surface.

Dip bread slices in mixture, coating both sides, and lay on skillet. Flip the toast when it is lightly browned & brown other side.

Serve with extra cinnamon, maple syrup, or jam

* 2-3 ripe bananas
* 3/4 cup soy milk

* 1 teaspoon pumpkin pie spice (optional)
* 1 teaspoon vanilla
* bread, any kind is fine
* butter or margarine

Blend bananas, soy milk, cinnamon, pumpkin pie spice and vanilla in blender or food processor and pour mixture into pie plate or wide dish. Gently dip bread slices into the mix, coating both sides. Fry in butter or margarine in medium-hot skillet until golden brown.

It was sort of recommended by MsV in an earlier answer, but let me tell you first-hand: EGG REPLACER is wonderful! There are a few varieties. Ener-G and Bob's Red Mill are both good, and you can make any recipe you'd normally use eggs in by simply mixing the egg replacer powder with a bit of water (instructions on package) and dumping it in. Sounds too good to be true, I know. But it is an excellent consistency. Let me know if it works! :)

I am allergic to eggs, soy, wheat, and other things. I make french toast by dipping the bread (gluten free, homemade for me) in a mixture of ground flax seed softened in a bit of warm milk (or water or juice). Mix about 2 tbsp of flax (I grind it in a coffee bean grinder) with about 1/2 cup liquid-per egg you wish to replace. Cover the mixture, and allow it to "gel" for about 5 minutes. It will be the exact consistancy and texture of an egg. Then, just soak the bread in the flax mix and cook it the way you do regular french toast. Hope he enjoys it! We use agave nectar instead of syrup, to avoid the high fructose corn syrup in many of the commercial things on the market.

"Fronch" Toast

Loaf of Italian or French baguette-style bread (preferably a little stale)
1/2 c soy creamer (can substitute rice milk)
1/2 c rice milk or plain soy milk
2 tsbp cornstarch
1/4 c chickpea flour
Several tablespoons canola or vegetable oil

Slice bread 1" thick. If the bread isn't a bit stale, toast it a bit or put it in a 350 degree oven for 3-4 minutes. Pour soy creamer and rice milk into a wide shallow bowl. Mix in the cornstarch and stir until dissolved. Add chickpea flour and mis until mostly absorbed; some lumps are OK. Heat a nonstick skillet over med-high heat. Add enough oil to create a thin layer on the bottom. Soak the bread slices in the mixture and transfer to the skillet. Cook about 2 minutes on each side (cook and additional 1-2 minutes on each side if not as brown as you like.)

It's great - I just had some yesterday!

I have a different recipe.

Use some chic pea flour, mix with water, maybe some oil too, whip it up, then dip your bread slice in it then fry. Eat with real maple syrup.

Super easy and I think it tastes great.

Indian people use chic pea flour a lot, so easily found in an Indian market or in the ethnic isle of the grocery store. Otherwise, you can just blend up some canned chic peas I guess.

no egg=no french toast! Is he allergic? Or does he just not like eggs? Make him pancakes. I'm sure there are pancake mixes with no egg in them.
