I assume from the context that by "hardcore vegetarian" you mean "vegan." This is the correct name for people who eat no animal foods at all. Vegetarians may include milk and eggs in their diets, and most do.
Yes, vegans may eat bread and cakes and cookies and pies and other baked goods, as long as they are not made with dairy products or eggs. Most commercial bread is not. And anyone who thinks you can't make quality baked goods at home without animal secretions has never explored vegan baking. There are entire cookbooks devoted to vegan baked deliciousness as well as actual vegan bakeries where one can purchase these types of items.

You would be surprised at how many breads do not contain eggs or dairy. My local health food store has all kinds of vegan friendly breads too. I don't find it hard to find at all.
As far as pastries and desserts go, I make my own at home unless I am at a vegan or vegetarian restaurant.
Yeah, Im vegan and it's one of my staples. There are no eggs or milk in the ones I buy or make. I usually buy regular whole grain wheat bread with the least amount of ingredients. I also check to make sure there's no honey or dough conditioners, but I always find a good one.
You don't need milk and eggs to make bread. For the most basic bread all you need is flour, water or oil, salt, and active yeast.

A vegetarian does not eat things that kill an animal (flesh, gelatin, rennit, etc) Most vegetarians eat dairy and eggs. Lacto vegetarians would eat bread that contained milk, but not eggs. Ovo vegetarians are the opposite. Vegans would not eat anything with milk, eggs, honey, etc.
I eat bread and most parteries. some you have to be careful of- Hostess pasteries for example may contain beef fat, so I don't eat anything Hostess makes. Some sweets or biscuits are cooked with lard, which is pig fat. Some frostings (like poptarts) contain gelatin. But on the whole breads and pasteries are vegetarian friendly.
