Raw honey is the only honey I eat, and it has never made me sick.
Raw honey is safe except for infants. Infants should never be fed raw honey.
"Most micro-organisms do not grow in honey because of its low water activity of 0.6.[4] However, it is important to note that honey frequently contains dormant endospores of the bacteria Clostridium botulinum, which can be dangerous to infants as the endospores can transform into toxin-producing bacteria in the infant's immature intestinal tract, leading to illness and even death"
Check out the source link below. It's a fascinating and informative article on honey.
As far as your second question, I can answer from personal experience that raw honey is very safe to eat. I have been eating it for years.
Raw honey is safe to eat as long as you are in good health with no immune issues. Babies are not supposed to eat raw honey as their immune systems are not developed enough to process the bacteria. The honey sold in stores is pasteurized which is a heat process used on dairy products as well to kill the natural bacteria found in all raw animal products.
raw honey is not always safe to eat, but store bought honey is pasturized and very safe and will never go bad.
Raw honey is indeed safe to eat. Processed honey will have been heated to a temperature at which the enzymes are destroyed.
Find raw honey, as local as possible.
