2.buck wheat is gluten free so if you find a buckwheat pasta (without other wheat in it) you can make a nice pesto pasta (pine nuts are seeds not nuts).
3.Otherwise make a nice salad with avocado, sun-dried tomatoes and other veggies of choice. You can add dried fruit to it (eg. figs or raisins) and sprinkle with some pear or apple juice.
Also think of crudites with guacamales.

I love these recipes and I'm not even a vegan.
salad bar with dressings on side ( have lettuce and all kinds of raw veggies-broccoli tomato etc)
marinated and grilled potabella mushrooms
baked or mashed potatoes with soymilk
red beans and brown rice( prepare rice as normal, and add 1-2 cans of vegetarian chili beans..sooo good)
almost any soups
fruit punch
one can frozen pineapple conentrate juice
" " orange juice
1T lime juice (optional)
2 bananas, mashed
1/2c sugar
handfull of sliced strawberries
mix together well in pitcher, will be like slush
For me I would make a cabbage roll dish with barley andTVP either in the rolled form or as a child my mother made what she refered to as "lazy cabbage rolls", you shred or cut the cabbage in pieces par-blanch it and then make the filling, with the barley and TVP, layer it and the pour tomato sauce over in and bake it in the oven for 45 min - 1 hours at 325-350 d F.
For the filling this for either method, saute some onions in veg oil, add some seasoning, I like to add smoked paprika, caraway, oregano and a veggie seasoning, I limit my salt, but a dash is fine, then the barley and TVP, 1 cup of each, toast it in the onions/spice and oil for 2-3 minutes, then add either tinned veg broth, a couple of cubes in hot water or just water, a spoon full of tomato paste, and then let it simmer on the stove or in the oven at 325 for 45-60 until the moisture has been absorbed.
Let it cool for 30 minutes and in the this time prepare the cabbage, I like to use savoy cabbage but regular white is fine, as I said you can shred it like coleslaw or chop it into medium to large chunks size piece, if you do it in a larger form to speed up the cooking with the sauce and filling either hot water blanch it for 5 minutes or place in the microwave for 8-10 minutes to par-cook it.
Then start assembling the dish, like lasagna, a layer of sauce or filling, cabbage and do this until,the last layer is cabbage then add a tin or 2 or Hunts plain or seasoned tomato sauce or 1 of that and a tin of diluted tomato soup, then bake it for 45-60 minute at 325 - 350 d F and I place mine on a baking sheet with a layer of foil, just in case it bubbles over, either method is fine the way, and as there is no dairy, egs, meat or pathagins in the mix it can be left out and served just warmed the next day, or made chilled and then heated in the oven for 30 minute @ 325 or in the microwave for 15-20 minutes at 70% power. I hope you try this or a similar dish, you can also use zucchini, eggplant, even make it into a soup.
There are so many things you can bring! Avoiding gluten, nuts, and animal products is not a big deal if you cook and/or bake.
To the recipe at the link below add extra veggies or stir fried tofu for added oomph!
