How can I cook gluten?!


Question: my friend made it like in dumpling looking things with rice and it was good. they said it was the food of the future. i am recently shell shocked from the beef recall vids. i want to eat gluten instead but i dont know alot about it. and why do people want gluten free stuff?

Gluten is the "stringy" thing in your dough when you make bread. It makes the bread chewy. If you seperate the starch (makes the dough stick together), you get gluten.

You can basically substitute gluten with any meat, but be sure to really season it well. You can use vegetarian bouillion powder to season it.

Some people are allergic to gluten, but if you have no problem eating bread, you are robably not allergic.

A good and easy recipe is make vegetarian burger. You substitute the meat with chopped gluten, mix a little flour and starch to bind them together, add 1/4-1/2 cup of soy sauce to your mix will bring up more flavor.

You were probably eating seitan. (?) Just an educated guess. You can actually buy it pre-mixed at your local health food store. After you get it home, all you have to do is put it into whatever form you need.
(like if you want to make "meat"balls, "meat"loaf, etc.)
I wouldn't suggest making it from scratch - it's a pain in the bum!
Some people's digestive tract cannot process and break down gluten. It can make them very sick, so they cannot eat it.

i've never heard of just eating gluten, what do you mean? do you mean the dumpling skins had gluten in them? i don't think gluten is a replacement for meat, it's an ingredient in a lot of other products though. (for instance it's in a lot of veggie burgers)

people want gluten free stuff, becuase like peanut allergies, or lactose intolerance, a lot of people cannot process it. some are allergic and some have what's called "celiac disease", which means your body cannot process gluten. so they cannot eat anything that has gluten in it or they have a bad reaction. it's very difficult because gluten is in soooo many things. especially pastas, cookies, etc. but also in other things you wouldn't expect.

I made from scratch, it was really weird. You buy pure gluten and mix it with water and it turns into a squishy jelly blob...and you need to knead it forever (no matter what the recipe tells you). Then you need to cook it for almost 2 hours. Then you can chop it and cook it however you like.

I've only tried it once, and followed recipes on the internet. I searched a bunch and went from there. If you break it up before cooking it, I can see how it could be like a dumpling if you cook it in veggie broth. Do some searches for seitan or gluten and go from there.

Some people cannot process and break down gluten properly, that's why they have to avoid it. But most people are just fine.

Here are some links to seitan recipes made with vital wheat gluten...you can also use whole wheat flour and "wash" it under water with kneading to wash the starch out leaving the gluten protein...
