Suggestions for a tofu marinate?!

Question: Hi everybody,
I'm trying to make the transition to being a vegetarian, and my first step was to eat tofu (for the first time). Well, I liked the texture well enough, but the marinate I chose was terrible! I believe that it was mesquite, and it was too salty and has a wood-like taste. I would like the marinate to have a light taste: I would like to eat the tofu for lunch as well. If anyone has a recipe/ product suggestion, I would really appreciate that!

Thanks in advance...

Here is my favorite recipe for tofu.
The end result tastes compareable to one of those frozen veggie chicken patties you can buy in the store.

Cut the tofu into strip like pieces or whatever shape you prefer.
Put the peices into a container with a lid or my fav a zip lock baggie.
ADD to that
a cup of water or stock of choice
a tablespoon and a half of soy sauce *I would use lower sodium soy sauce instead of regular since you don't like salt*
two tablespoons of italian seasoning
an eighth of a teaspoon of garlic powder...or two if you like garlic
an eighth of a teaspoon of onion powder
and an eighth of a teaspoon of pepper
Then put in the frige and let the flavours immerse themselves in the tofu.....this takes at least a good hour...the longer the better.
Then you take out the tofu and you can pan fry in a bit of vegetable oil (not olive oil or other strong oil) on the stove. OR you can bake in the oven at 350 degrees on a cookie sheet until golden brown. Tip....dark golden brown color is a good thing...it won't taste burnt even though you might think it will...that is the color you are going for.

Adding a coating of breadcrumbs before cooking just like you would a real piece of chicken makes for a great sandwhich filler. DIP in water to get the crumbs to stick......or an egg if you still eat eggs.

You can also try......
Just marnading in a broth or stock of choice overnight
A favorite barbque sauce of choice
If you are going to add it to something...like spaghetti for example...marnade in bit of water and italian seasoning/oregeno/garlic................... spices that are already in the dish to some water or stock and marinate the tofu in that

try low-sodium soy sauce, sesame oil, ground ginger, and minced garlic. The amounts are up to you and give the marinade a taste before adding the tofu. If it's too salty, add some water or if you feel its missing something add additional spices/herbs.

good luck
