2 ripe avocados
? red onion, minced (about 1/2 cup)
1-2 serrano chiles, stems and seeds removed, minced
2 tablespoons cilantro leaves, finely chopped
1 tablespoon of fresh lime or lemon juice
1/2 teaspoon coarse salt
A dash of freshly grated black pepper
1/2 ripe tomato, seeds and pulp removed, chopped
Garnish with red radishes or jicama. Serve with tortilla chips.
1 Cut avocados in half. Remove seed. Scoop out avacado from the peel, put in a mixing bowl. (See How to Cut and Peel an Avocado.)
2 Using a fork, mash the avocado. Add the chopped onion, cilantro, lime or lemon, salt and pepper and mash some more. Chili peppers vary individually in their hotness. So, start with a half of one chili pepper and add to the guacamole to your desired degree of hotness. Be careful handling the peppers; wash your hands thoroughly after handling and do not touch your eyes or the area near your eyes with your hands for several hours.
Keep the tomatoes separate until ready to serve.
Remember that much of this is done to taste because of the variability in the fresh ingredients. Start with this recipe and adjust to your taste.
3 Cover with plastic wrap directly on the surface of the guacamole to prevent oxidation from the air reaching it. Refrigerate until ready.
4 Just before serving, add the chopped tomato to the guacamole and mix.
Serves 2-4.
Not really. I love a good steak with lots of pepper. Vegetarians are pale and dont look healthy. Meat is important to the human diet and we have been living on meat for thousands of years. Its not good to jump on a band wagon and think you're getting kudos, for your body suffers :(

I love that recipe because of the pretty colours. And it tastes great and it's easy to make.
Just cut off the head and remove the core of a huge pepper, put it in the oven to grill for a few minutes, just until it's not too hard any more. Then remove the skin. Fill it with a mixture of cooked rice, peas, onions, carrots, your favourite spices and herbs.
Roast onions and mushrooms to make a sauce, add cream, until the sauce thickens, put both sauce and pepper (with the head on top) into a pot and let it stew for 15 min.
It tastes great and you don't even need a side dish.
I'm a veggie too, I don't believe humans were ever made to eat meat.

You can make all your favorite meals these days and just subsitute the meat with TVP products. I like LightLife, and you can get it at any major grocery store.

sure probie, only I never thought of it as vegetarian before here goes...
1/4 cup olive oil, 1 yellow onion, diced, 1 eggplant, stir into 1/4 inch cubes, 3 cloves of garlic, finely chopped, 1/2 red bell pepper, cut into 1/4 inch cubes, 1can (15 ounce) small diced tomatoes w/liquid, 1/4 cup of chopped carrots (softly boiled first), 2 tablespoons balsamic vinegar, 1/2 teaspoon salt / pepper each, 1/8 teaspoon each of cinnamon, crushed red pepper flakes and add 1/4 cup pine nuts if you are not allergic.
Prep time: 25 min; Cook time: 30 min.; servings:6
Heat oil in a large skillet over medium to high heat. Add the onion cook until brown, stir for about 5min, stir in eggplant cook until brown for about 8min, stir in garlic and red pepper, cook stirring for about 3 minutes.
Stir in tomatoes, carrots, vinegar, salt pepper, cinnamon and red pepper flakes, lower heat to medium cook, stirring until eggplant is tender for about 10min, stir in pine nuts ( often at this stage we put in shrimp that had been readied, but maybe you don't like seafood so...) cook stirring for about 2min.
Serve warm or at room temp. Cannot tell you about calories because I don't know.
I would suggest a red wine like St.Emilion or Chateau Ste. Michelle's Cabernet Sauvignon. The first is French the second comes from Washington state enjoy.
