Recipes for soups with these given ingredients?!
I have: 1 fresh medium eggplant, onions (red and regular), 2 heads of fresh brocilli, potatos (russet/regular), 1 fresh red pepper, carrots, and some celery.
Frozen.. spinach, green beans, peas, dill.
And I also have some canned beans and such, I'm want to use 1 can of red kidney beans for a vegtable soup.
I'm only really unsure of the eggplant... when should I add it to the soup/how long will it need to cook? Will it just end up breaking apart into the soup like squash does? THANK YOU!
Also suggestions for spices (beyond salt/pepper obviously)?
Answers: Looking for a vegetarian or vegan recipe.... in soup you can really put anything in it, but I'm looking for a basic recipe of which I can start off with to help with how long to cook and such...

Cook the potatoes seperately, then add to the soup later. I would also lightly fry the eggplant and add it in at the last.
Otherwise, I would use a tomato (how ironic) base with a bit of brown vinegar and spiced rice vinegar.
I would then add the broccoli, then the kidney beans, then the carrots, celery, in just that order due to cook times. Leave a few minutes in between each.
After those items are to the desired consistancy, then add the frozen stuff and let boil for a few more minutes.
Finally add the pre cooked potatoes and eggplant. I would add salt and pepper obviously to taste.
Add a bay leaf and a bit of saffron as well.
