I just made this loaf of vegan banana bread; and oh my freaking god. It's just wonderful! With a little spread of soya butter on the top of a slice and I was in heeeaven.

It was dessert for after some vegan tacos - in which I substituted the mince with TVP I bought from a market dry and soaked myself. Yuuummmy!

I agree about the way too many angry vegan/vego discussions. D: So here's the recipe!



Vegan Banana Bread

Ingredients
1/2 cup brown sugar
1/2 cups white sugar
1/2 cup margarine, at room temp
3 very ripe bananas, mashed well
2 cups flour
1/2 teaspoon baking soda
1/4 cup vanilla soy milk, mixed with 1 teaspoon apple cider vinegar
1 teaspoon vanilla
1 teaspoon cinnamon
1/4 teaspoon allspice
1/2 teaspoon salt

Directions
Preheat oven to 350 F. Spray a 8x4 bread pan with non stick cooking spray, or lightly coat with margarine.

Sift together flour, baking soda, salt and spices.

Cream together the margarine and sugars. Add bananas, soy milk and vanilla.

Add the wet ingredients to the dry. Mix well. Pour batter into pan. Bake for an hour to an hour 10 minutes.



I didn't use the vinegar because I didn't have it, and I also sprinkled walnuts on the top.

Perfect! :)

Do you like Chilli? Kidney beans, turkey mince, onion, peppers, and cumin, papriki, and chilli powder, with two tins of chopped tomatoes and a small amount of water = one delicious feast! Try adding a stock cube too, yum.

I havent given you quantities because it's not really needed, just experiment until it's the consistency and to your taste level of spiciness. Be careful with chilli powder.

Vegetarians and vegans are such an easy target of criticism when in reality they do have a strong argument against consumerism and mass produced food that is inhumanely treated.

I'm not a veggie though lol I was for two years but I was losing too much weight on it.

EDIT: Oops, I just realised this was asked by a vegetarian? Just substitute soy mince/texturised vegetable protein but add it after you add the tomatoes, and add extra water for it to soak up. Simmer it for a bit longer than you might otherwise but that might bring out extra flavour as well.

This is asuming that you eat eggs, but if not im sure you know how to replace them.

i make this carrot loaf with nuts that is awesome with butter, again if you eat dairy but there are soy butters too.

1/2 teaspoon - baking powder
1/2 cup - macadamia nuts
1/2 cup - walnuts
1/2 cup - pecans
1/3 cup - golden raisins
3 large brown eggs
3/4 cup - vegtable oil
1/3 cup - pineapple (crushed and dried out)
2 cup - shreeded CARROTS (i use the kind used for salads that they sell in the produce department)
1 1/2 teaspoon - cinnamon
3/4 cup - honey
1/2 cup - dark brown sugar

2 cup - all purpose flour
or
1 cup all purpose white flour
1 cup whole wheat ale purpose flour
or
2 cups whole wheat flour.

1 teaspoon - salt
1/2 teaspoon - ground ginger
1 1/2 teaspoon - baking soda
2 teaspoon - vanilla extract
1 cup - rolled oats


preheat oven to 325 degrees



mix togther flour, brown sugar, cinnamon, ginger, baking soda, baking powder, and salt in a large mising bowl. once throughly mixed mix in the oats LAST!

whisk the eggs till fuffy, add oil and vanilla and mix well.

make well in the middle of the dry parts, pour in the honey into the dry ingredents then mix in the wet. mix till all is wet

add the raisins and nuts, the nuts can be in any condition you would like; chopped whole or milled leave some whole for a nice little suprize through out the bread., mix well. Then ad the pinapple (drain it thoughly, think like it was tofu, i drink the juice after wards becuase one, yum, and two it will make the bread to moist, don't use the kind in syrup or it will taste too sweet and that ruins the point of honey rather then sugar and again no juice if you use the kind in syrup) and mix very well.

finally add the carrots but do not over mix it lightly, spread it through out it but not so much that the carrots are not vissible,

at this point the dough will not look that appitising.... but it gets better!

pour into a prepaired 9x5 loaf pan (our like 2 of those disposible ones from the store) lightly buttered.



bake in the center of the oven for 55-65 minites, till a toothpick or a knife comes out mostly clean, remove from pan once if can be done so, cover it with a towel , tuck it in like a child, and let sit for roughly 15-20 minutes to alow it to sit properly.



slice into about 3/4 inch slices and serve with butter or cream cheese.



for muffins add more pine apple and not as dry as you would for bread, smaller volume so it can get cooked good enough to set.

try topping it with a trail of pecans or walnuts

i think i said it before in this but if you use whole wheat flour it will be dryer then white flour. ALSO, I have had times when this doesn't rise in the middle becuase of the pineapple so use little amounts of it and make sure it is dry as you can.

Savoury Mushroom Cups

Allow two big mushroom cups per serve.

Reserve the mushroom stems and chop finely.
Two cloves of garlic minced finely.
2 tomatoes skinned and seeded, diced finely.
Two whole green onions diced finely.
1 red capsicum diced finely.
1 heaped tablespoon of ground almonds.
1 small aubergine skinned and diced finely.

Salt and pepper to taste.

Blend all diced veg together with seasonings.

Pack into mushroom cups. Drizzle with a little olive oil.

Place in a baking tray on baking parchment.

Bake in a moderate oven for 12 minutes to make it hot and tasty.

Serve with lemon wedges and fresh chopped chives or parsley.
