How do you freeze tofu? and can you?!


Question: Why did my tofu turn the color of canned pineapple when I froze it? I cut it into little sqared off portions and put them in freezer bags and then into the freezer. My mom does that too and hers didn't turn color..it was still white. What did I do wrong?

Freezing tofu is useful for storage and also changes the texture. It becomes chewier and closer to the texture of meat. The brand/type of tofu might make a difference in the color. Did you press out the water first? Does your mom? The color change doesn't mean you did anything wrong, its probably just the type of tofu you used

I buy tofu that comes in vaccum-packed plastic and I just throw the whole thing into the freezer.

In the future, maybe use better-quality bags, or those handy Ziploc containers. :-)

When I freeze my tofu--and you are using the water-packed kind, right?--I drain out all the water, wrap it in a plastic bag, and then stick it in the freezer. Sometimes there is a little bit of color change, but not much. But I don't slice it or dice it or anything; I just freeze the entire block in its original packaging. I also store tofu in the freezer.
