Here is my answers to my earlier question of freezing Tofu....?!


Question: I used quality freezer bags...I used organic tofu from Wegman's grocery...I did not squeeze the water out, I just drained it and cut into chunks...(so that will be helpfut) the reason I divide it out because then I can use a single portions as I need it since I'm the only one in the house that eats it. So, is it still ok to fry it in a pan with my stir fry veggies? I didn't ruin it, did I?

You'll want to press the tofu in the future. It's a simple process, drain tofu from package then wrap tofu block in a clean kitchen towel or several paper towels. Put a pot or plate on top with a couple heavy cans and let sit for about 45 minutes or longer. This will get out most of the water out and then you can slice it up and put in the freezer.

Nah, I don't think you've ruined it. My organic tofu gets kinda yellower in the freezer, too.

It will be mushier than if you had pressed it, but of course it's still edible.

Tofu looses it's texture when frozen. It is more difficult to work with.

Tofu will stay fresh for a about a week in the fridge if you place it in fresh water, noting that you need to change the water at least every other day.
