Anyone have a recipe for a vegan or vegetarian spaghetti pie?!

Veggie Pasta Bake
From: Avril - Ireland

Easy to cook and prepare, made in minutes, a vegetarian triumph.

* 250-350 g of pasta
* 3-4 cloves of garlic chopped
* 1 red pepper
* 1 green pepper
* 1 orange/yellow pepper
* 3-4 zuchini
* 7-8 mushrooms
* fresh oregeno
* fresh chives
* fresh rosemary
* 1-2 can(s) of copped tomatoes

Chop garlic, and saute in a litte olive oil, next add your peppers , let them soften for one to two minutes, next stir in your zuchini and mushroom.

PRE HEAT OVEN TO 190 fahrenheit. place pasta in a saucepan and cook in boiling water for 5-7 minutes .

Once the veg is ready, drain your pasta and stir half of the quantity in with the veg and chives and oregeno to season,place in a lasange dish cover with the remaining pasta sprinkle with a good helping of cheese nutmeg and rosemary,place in oven and cook for 25-30 minutes.

Many of my friends have tried this particular recipe and all agree that it tastes splendiforous !! ENJOY

I've never heard of spaghetti pie before.. but you could probably do something like...

Make your spaghetti like you usually do, garlic, onion, basil, tomato puree/sauce, and TVP mince is wonderful in it! Boil the pasta, when cooked/almost cooked, drain and add to sauce. Mix, cook for a little longer so the pasta soaks up the sauce... then.. um... get some savoury pastry and line a pie pan with it? Fill to the top with spaghetti, chuck the pastry lid on, cook in oven til pastry is done!

It would be vegan, too, making sure you used vegan pastry, of course!

VEGETABLE PASTA PIE

2 2/3 c. cooked spaghetti, hot
1/2 c. grated Parmesan cheese
1 tbsp. butter
1 tsp. chopped parsley
1 c. chopped zucchini
1 onion, chopped
1/2 chopped green pepper
1/2 c. sliced mushrooms
2 tbsp. water
1 garlic clove, minced
1 sm. can tomato sauce (1 c.)
1/2 c. tomato paste (1 sm. can)
1/2 tsp. EACH oregano, marjoram & basil
1/4 tsp. salt
1 1/3 c. Cottage cheese, divided
1 c. grated Cheddar cheese

Combine first 4 ingredients. Mix well and press into sides and bottom of 9 inch pie pan to form a crust. Combine next 6 ingredients and cook over medium heat for 10 minutes. Stir in tomato sauce, tomato paste and seasonings. Simmer 5 minutes. Spread 1/2 of Cottage cheese over spaghetti. Top evenly with tomato-vegetable filling. Combine remaining Cottage cheese with Cheddar cheese and top pie with it. Bake at 350 degrees for 30 minutes until heated through.
May use prepared spaghetti sauce instead of making sauce.


AND


EASY SPAGHETTI PIE

8 (10 oz.) cooked spaghetti
2 c. sauteed vegetables, (do not overcook)
1/2 c. Parmesan cheese
1 c. Mozzarella cheese (WIC)
5 eggs, beaten (WIC)
2 tsp. parsley
1/2 tsp. basil
Dash of black pepper
1/2 tsp. garlic powder
1 tbsp. oil

In large mixing bowl, combine the spaghetti and sauteed vegetables (peas, carrots, mushrooms, spinach, peppers, etc.) Add the cheeses and spices. Mix in the beaten eggs. Pour the mixture into a hot oiled skillet. Cook omelet style for about 10 minutes at medium heat. The bottom of the mixture should be well browned. Use a dinner plate to flip the "pie" and return to the hot skillet to cook the second side for about 4 more minutes. Transfer to a serving platter and slice like a pie. Top with your favorite spaghetti sauce.
