Well it was easy for me, because i realized that i would live a healthier life if i became vegan. (before i was only eating junk food like chocolate and pizza). IM not sure how easy it will be for you; it depends on how bad you want to do this.
When i went vegan I kinda felt the same, but i here about others who have gone vegan and felt a lot better, and ive heard of those who felt worse (due to doing it right or health related issues).
There are tons of replacements, such as egg replacement (i think it ENER-G egg replacement), butter replacement, ice cream (i like toffuti the most), and soy milk. You can find the milk at almost any grocery store and you can find the ice cream at publix (look for "toffuti" or "so delicious"). As for the egg and butter, you might want to see if there is a store in your area that sell vegan products.
You can eat nutter butters!!! lol my favorite cookie thing. You can eat a lot of stuff. I'll leave you this link from peta:

There are some things that you cant eat though. Be on the look out for products that contain: gelatin, glycerin(e), and lard. These products contain animal fat and cow hooves (glycerin(e) can be animal fat or vegetable fat, you must call the company to find out). below are some things that i know are not vegan or vegetarian or that manner:
skittles
starburst
gummy bears
some gum
some soap
some toothpaste (colgate is vegan)
some mouth wash
junior mints
poptarts with frosting
marshmellows
some cerials...
and the list goes on and on; just look at the ingredients, because i dont think i can list them all lol.
The benefit for me was that you help to save lives! lol that made me really happy, we are healthier (only 2% are over wieght while), i also heard that we can memorize things better, and that we tend to be in better moods than omnivores.

Basically no animal product or by-product is the vegan lifestyle. So no butter, milk, cheese or eggs that you may have been using up to now.
You can use soy milk, rice milk, soy cheese, tofu and nuts, oils pressed from almonds, olives, ground nuts and things like that.

what are some replacements? Qourn and tofu and soya are great. You can even get dairy free chocolte milk!!!
what can i eat, and can't i eat? you cant eat ANYTHING from an animal. you can't eat eggs,milk,cheese, yoghurt,NOTHING TO DO WITH ANIMALS!! not even milk chocolate!!!
what are the benefits? you are just after saving a lot of animals and prove that humans don't need meat!

Basically no eggs, and no dairy products at all, you can eat honey if you want it depends on the person, and no Jello or marshmallows unless you can get the ones from specialty stores that is. You could try rice milk and rice cheeses, tofu cheeses, almond cheeses, soy milk, almond milk, and i think some people drink a type of hemp milk but i wouldn't. It is pretty hard, and i'm not going to go on spiritual benefits but if you practice a good diet and aren't just eating vegan potato chips all day your system could be healthier and you could experience some other things, but that also counts out the rest of things.
You can't eat anything with:
Eggs
Milk
Butter
Cheese.
So, that will exclude some types of noodles, milk chocolate.....
Anything with any type of that dairy.
Fortunately, things like pancakes, french toast, well....almost any food, you can replace the milk with soy milk or rice milk.
Tofu is also very good. I cut it into chunks and put it in my food...like soups and stuff.
As stated in an answer below, be sure to read labels for dairy that might be listed. Going to a Health/Organic Market is a good place to look. Most foods are obvious that you won't need to question. But other things are not. There are cake mixes and other mixes that would be clearly listed as vegan. If you have a Whole Foods near you, that would be a good place to start. I just bought the most amazing,homemade chocolate chip almond cookies that were vegan. Yummmm!!!
