Veggitarian recipies?!


Question: okay, i love boca burgers and stuff like that but im animic so i need more protein and selection any suggestions??? No high calorie stuff like mc donald salads (those have more carbs and calories than a big mac)

VEGETARIAN SAUSAGE

1 c. textured vegetables protein, available in health food stores or vegetarian section of store
1 tsp. thyme
1 tsp. sage
1 tsp. turmeric
1/2 tsp. ground coriander
1/4 tsp. pepper
1 c. boiling water
1/4 c. whole wheat flour
2 eggs
Oil

Mix together protein and spices. Pour boiling water over the mixture and allow stand about 5 minutes, until water is absorbed. Stir in flour and eggs. Heat the oil over medium heat in skillet. Shape the mixture into small pieces and brown on both sides. 12 patties.

VEGETARIAN PROTEIN LOAF

4 eggs
2 c. cooked brown rice
1/2 c. cut onions
1/2 c. cut mushrooms
1/2 c. crushed nuts
1/4 c. wheat germ
2 c. grated cheddar cheese

Mix all ingredients together. Bake at 350 to 375 degrees for about an hour in greased loaf pan. This may be served plain or with gravy. Optional: You can add celery, carrots, etc.

Anemic means you need iron, not protein. If you're eating boca burgers and other meat analogues (which are fortified with iron beyond what meat contains), I'd say your body is just having a hard time absorbing it. Eat vitamin C with your food. Good sources of vitamin C are broccoli, strawberries, cantaloupe, spinach, citrus fruits, tomatoes and peppers.
All fruits contain Vitamin C, but the following fruits are a relatively poor source- apples, bananas, grapes, cherries.

I agree with JATB.

Anemia involves a lack of iron, not protein. I had this when I was a teenager. You need to start packing in the dark green veggies (broccoli, peas, spinach, boc choy etc) and mushrooms!!!

Try stir fries. It's a quick & easy way of getting a good amount of iron!
