Any ideas for a Vegetarian side dish?!
Answers: For dinner tomorrow I am going to make some setin BBQ kababs, garlic mash potatoes, and I need a green veggie for the side dish, but I am not too creative today. If anyone has any good and quick recipes for a veggie side dish that would be great.
Angelic Lemony Leeks & Sprouts
Prep Time: 10 minutes
Cooking Time: 10 minutes
Serves 4

INGREDIENTS
300g trimmed leeks, finely sliced
200ml light vegetable stock
200g trimmed Brussels sprouts
2 tbsp fresh lemon juice
Seasoning to taste
METHOD
1. Place the leeks in a large saucepan and add the stock. Bring to the boil, cover and simmer on a low heat for 5 minutes before adding the sprouts.
2. Stir, replace the cover and simmer again for 4-5 minutes until starting to soften. Drain then season and stir in the lemon juice, just before serving.
Sesame Shredded Brussels Sprouts
Ingredients
2 tbsp vegetables oil
2 cloves garlic, crushed
450g Brussels sprouts, washed, trimmed and grated
2.5cm fresh root ginger, grated (optional)
1 tbsp lightly toasted sesame seeds
to taste salt
1. Heat the oil in a frying pan and lightly sauté the garlic.
2. Add the grated Brussels sprouts and stir fry lightly to retain crispness and colour.
3. If using, squeeze the grated ginger in your hand over the pan to release the juice. Discard the pulp.
4. Add the toasted sesame seeds and toss well.
I suggest grean beans or some broccolli. Add melted cheese
and a special twist to make it as yummy as you want!
how about some vegi stir fry get fresh string beans, carrots, cabbage, baby corn, and what ever vegi you like just fry them all up and add some soy sauce
or vegi lettuce wrap there really good just google it

YES I DO! Try sesame green beans, they are fantabulous!
Saute green beans til bright green (2 min)
turn down heat to low and cover
cook til spotty brown and tender (10 min)
Uncover, stir in soy sauce mixture (1 tsp soy sauce, 2 tsp honey, 4 tsp veg. oil)
and cook til beans are glazed (1 min).
Take off heat and stir in 2 tsp rice vinegar, 2 tsp. sesame oil, and thinly sliced scallions.
Sprinkle with toasted sesame seeds.
Everyone will like it, I promise!
OH, do use the toasted sesame oil (for seasoning and flavor), not the clear 'veggie oil' type... you're after the flavor!)

Here is how u make the restuarant quality.
U can use one of my suggestions, two, or all of them.
- First use a regular large bowl and put cold water and ice in. Don't worry u will get it at the end. Put it aside.
Then.... make sure to wash and trim the veggies the way they are supposed to be. When doing asparagus and hold it on both ends and snap it. Where it snaps is where it is supposed to be trimmed.
-Then with a big pot filled with water needs to be put to a boil. Add salt.
- Enter ur kinds of vegies in there (make sure to do different vegies separately). For asparagus leave it in 3 minutes, green beans for 3 minutes, and broccoli needs at least 5 minutes.
-When done cooking insert the vegies into the bowl filled with water and ice, this process will shock them from cooking even more so they wont continue cooking and be a gross green color and mushy. Nobody wants that!
- Your results: Crisp, green, beautiful asparagus, broccoli, and green beans like u eat in restaurants. To make extra tasty squeeze fresh lemon on them. Enjoy.

I recommend "massaged greens"
You can make this RAW dish with any dark green leafy vegetable (kale/collards/chard,beet greens, turnip greens, etc.)
2 lb. dark green leafy vegetables ((kale/collards/chard,beet
greens, turnip greens, etc.)
1/2 onion
1/2 C calamata olives, pitted and chopped fine
1-1/2 T apple cider vinegar
1-1/2 T extra virgin olive oil
garlic powder to taste (approx. 1 t)
chili powder or chili powder to taste (approx 1 t) optional
OPTIONAL: 1/2 C finely julienned red bell pepper, cabbage, turnip, beet, etc., or combination
* Wash greens. Remove center stem (carefully tear off leaf
sides from stem)
* Layer two or three leaves one on top of another, then roll
them horizontally tightly into a cigar shape. Slice thinly.
* Continue until all green leaves are sliced thinly.
* Place sliced greens in a large bowl (at least 1/3 larger than
the volume of the greens)
* Halve onion half vertically. Thinly slice onion (if possible,
use a mandoline) Add to greens in bowl.
* Chop olives finely and add to ingredients in bowl.
* Add spices (optional)
* Add optional vegetables, if desired.
* Add apple cider vinegar
With your hands, massage the ingredients in the bowl until they are reduced by about two-thirds or their original volume. (this takes about 1-2 minutes).
When the ingredients in the bowl have been reduced by two-thirds, add olive oil and mix well.
Allow to marinate 30 mins. to 1/2 hr.
Serves 2.- 4
This is really yummy -- it is just like cooked greens. (the salt in the calamate olives draws the moisture from the greens to wilt them, and adds flavor. The extra virgin olive oil adds flavor and Omega 3s. The vinegar helps to wilt the greens and adds healthful ingredients.
Hmmmm maybe VEGETABLES.
Wash a bunch of spinach or a bunch of kale, toss into a frying pan and lightly saute (less than two minutes) with garlic. Or just squeeze lemon juice on it after sauteing. And put veggies on the kabobs like mushrooms, onions, bell peppers, and zucchini.
