I used one called Wolffie's Cheezy Sauce in the book "La Dolce Vegan" by Sarah Kramer. It was awesome. I don't have the recipe on me because I'm at work but you may be able to find it online or if you go check the book out at the bookstore or library.

I too like Wolffies cheezy sauce, but I also love this one as well:

1/2 cup vegetable oil
6 cloves garlic , minced
3 slices yellow onions , chopped
1/2 cup all-purpose white flour
4 teaspoons nutritional yeast
4 tablespoons light soy sauce
2 cups water
1/2 teaspoon sage
1/4 teaspoon ground black pepper
1/2 teaspoon salt
5-6 white mushrooms , sliced (optional)
flour (optional) or cornstarch (optional)

Pour the oil in a saucepan and heat.

Add garlic and onions and saute 5 minutes.

Add the flour, nutritional yeast, and soy sauce, stirring constantly until it makes a think, thick sauce.

Gradually stir in the water and add spices.

Keep adding cornstarch or flour until it is the right thickness for you!

Serve hot

The proprietary brand MARMITE is made from yeast bred in the brewing industry. So take just a teaspoon full of Marmite and dissolve it over a low heat in two cups of red wine, add tomato puree (a spoon full) a teaspoon of Dijon mustard, and a spoon of really good berry jam or preserve (blackberries, raspberries, cranberries, blueberries...any will do. Add water if it's too thick. There plenty enough salt in the Marmite so don't add more. Good luck!

I live for the Cheezy Sauce in Veganomicon.

If you want gravy but you're willing to do without the nooch, Punk Rock Chickpea Gravy in Vegan With A Vegeance freaking rocks.

I make a super simple gravy also using marmite just because we keep it in the house anyway. I just use vegetable stock or bouillion,

sautee onions, celery minced until lightly browned,
I add the veg stock or bouillion and a teaspoon of marmite
then a slurry of corn starch and water to thicken

stir til of the right consistancy. a tasty gravy.

A nice country gravy can be made similarly, saute veg italian sausages cut up, with celery and onions in a bit of oil. Then add a few tablespoons of flour and cook as a roux. Add some milk (soy milk for vegans) to this and simmer to thicken. Season with garlic, salt and pepper and spoon over fresh bisquits unless you are trying to lose weight...delish!
