There are a lot of pasta dishes out there that have meat in them... but they taste great with either no meat, or soy substitute instead!... for instance, my mom makes rotini with broccoli, red peppers, artichoke hearts, and sausage... I simply take out the sausage, and it still tastes great! ;-)

Potato Cakes
Ingredients:
500g (1 lb) cooked potatoes, mashed
30g (1 oz) butter
2 tsp salt
100g (4 oz) flour
Directions:
Add the butter and salt to the potatoes and work in the flour. Knead the dough until it forms a ball. Roll the dough on a floured board to a thickness of 1/2 cm (1/4 in). Cut circle shapes using a plate. Cut these circles into 4 quadrants. Fry in oil.
Mushroom soup
2 cup(s) mixed oyster and button mushrooms
2 tablespoon(s) olive oil
1 onion(s) chopped
2 teaspoon(s) garlic finely chopped
1 cup(s) milk
3 cups hot vegetable stock
8 slices crusty bread
2 tablespoon(s) melted butter
1 cup(s) grated gruyere cheese
salt and freshly milled pepper to taste
Wash the mushrooms well of any grit (do not allow to rest in water as it absorbs the water and tends to become soggy) and wipe dry with a clean cloth. Cut big mushrooms into bite-sized pieces.
Heat the olive oil in a saucepan and saute the onions and half the garlic for about 3 minutes or till the onions are soft and golden. Add the mushrooms and stir to coat well with the oil.
Stir in the milk and bring to a boil. Cover and simmer for about 5 minutes. Stir in the hot vegetable stock and put off the heat.
Toast the crusty bread slices till golden brown. Mix the melted butter with the remaining garlic and coat the slices liberally. Place the slices in a large soup dish (tureen) or in individual soup bowls. Pour over the hot soup.
TIPS:
Any type of mushroom can be used as per preference.
Add more stock or water to get a soup of desired consistency.
A cheese of your choice can be used in place of gruyere.
The amount of cheese can be increased if desired specially if children love it.
Serve piping topped with: grated gruyere cheese

Open-Faced California Club Sandwich
Ingredients:
4 slices toasted whole-grain bread
1 ripe avocado
1/2 tomato
1 bunch of lettuce or spinach
Goddess salad dressing, or other creamy vegan dressing
sprouts, optional
Directions:
Place two pieces of the toasted bread on each plate.
Slice open the avocado, and use a fork to scoop out the avocado and mash it onto each piece of toast.
Add lettuce or spinach (and sprouts, if desired) on top of the avocado.
Slice the tomato and place two slices on top of the avocado and lettuce/spinach/sprouts on each piece of toast.
Drizzle the salad dressing on top of each piece of toast.
Comments:
Eat the open-faced sandwich with a fork and "steak" knife. (Cut the sandwich into bite-sized pieces for kids who can't handle their own knife and fork.)

Lenten Spaghetti / Makaronia Nistisima
The Greek version of Napolitan Sauce. Not only is this easy to prepare but it also makes a nice change even for those who like meat.
Ingredients
1 cup olive oil 1 tsp. dry thyme
1 chopped onion 1 tsp. dry oregano
1 clove mashed garlic 1/2 tsp. sugar
3 cups chopped tomatoes salt and pepper
1 cup vegetable broth cinnamon stick – optional
1 bayleaf 1 lb. cooked pasta of your choice
Heat the oil in a large saucepan. Sautι the onions and garlic until translucent. Pour in the tomatoes and broth and once it comes to a boil, lower the heat. Add your spices and simmer for about 30 minutes, stirring occasionally, until the sauce is thick.
That’s it. Simple and quick. Pour the sauce over your favorite pasta and you have a wonderful meatless dish.

Soy Signature (www.soysignature.com) soy pate; garlic, dill pickle, tomato, or bell pepper flavor
Fresh tomato slices
Fresh lettuce leafs
Slices of sandwich pickles
Optional: a slice of non-dairy 'tofu' cheese slices
Spread soy pate on bread, then place lettuce, tomato, and pickles in this order. S/P to Flavor. Add the 'cheese' directly following the pate, or place last (on top) and toast until cheese melts.
Alternate soy pate flavors, or mix flavors to keep things changing.

Thai/Chinese Spring Rolls
1-2 oz cellophane noodles (bean thread)
1 C TVP - Textured soy protein
1 t soy sauce
1/4 t pepper
2 green onions chopped
1 carrot shredded
1 smallish chunk cabbage, chopped
1/4 C chopped mushrooms
1 t succanat
2 packages spring roll wrappers
mix tvp with 7 oz hot water, let sit.
soak noodles in warm water, let sit. five minutes later, chop noodles, and mix everything together.
the wrapper package should explain how to roll them, though I cut my wrappers into fourths first to make very small rolls, about 80 of them.
fill a plate with water and disolve the succanat (or sugar) in it, dip each piece of wrapper in it, add a small amount of filling, and roll according to package directions.
the noodles are a pain, because they stick out all over the place.
then fry over medium heat, half-submerged in oil, until sort of goldeny brown.

Vegetarian Tapas Mushrooms
INGREDIENTS:
3 tbsp olive oil
3 cloves garlic, minced
1/2 pound mushrooms, stems removed
2 tsp lemon juice
2 tbsp dry sherry wine
1/4 cup vegetable or mushroom broth
1/2 tsp paprika
1/2 tsp red pepper flakes
salt and pepper to taste
2 tbsp fresh parsley, chopped
PREPARATION:
Sautee the garlic in olive oil for just one minute. Add the mushrooms and cook for another minute or two.
Add the remaining ingredients, except the parsley, stirring well to combine and coat the mushrooms.

Easy soup
Ingredients 1 cup frozen mixed vegetables
1/2-1 teaspoon cornflour
some vegetable stock (liquid) from supermarket
fresh ground pepper
Instructions Place the frozen vegetables in the saucepan and add water
Heat it till tender and thawed
Add some vegetable stock to taste
Mix little bit of cornflour with water in a small cup taking care not to make lumps
Add this to the saucepan and cook further
Turn off heat after a little while
Sprinkle with fresh lemon juice and ground pepper
Enjoy with garlic toast
Antioxidant Packed Veggie Delight Smoothie with Protein
This Delicious smoothie will get you a days supply of numerous nutrients!
Ingredients (use vegan versions):
2 cups frozen or fresh spinach
3 stalks kale
1/2 cup blueberries
1 tangerine or 1/2 large orange
2 teaspoons ground flax seed (or leave them out if you're not a flaxy- type person)
1 serving soy protein powder
about 10 ice cubes
1/2 cup water
Directions:
Rinse all fruits and vegetables (of course). Add kale, spinach and water to blender or food processor, blending thoroughly. Add remaining ingredients, blending thoroughly. You may leave or take the protein powder, I just like to add it to make this more of a "meal" smoothie. If you find the blueberries and orange aren't enough to sweeten, try increasing the amount of fruit (or experiment with your favorite fruit! I'd like to try this with mango..) you may also add stevia or your favorite sweetener. Enjoy!

Mushroom Pasta

Serving Size: 4
16 ounces fresh mushrooms -- halved
3 cloves garlic -- minced
3 tablespoons olive oil
2/3 cup dry white wine
4 to 5 plum tomatoes -- cut into chunks
1/2 cup green onions -- sliced
1/2 cup firmly packed fresh basil leaves
1/2 teaspoon salt or to taste
3/4 teaspoon freshly ground pepper
8 ounces spaghetti -- cooked
Saute mushrooms and garlic in hot oil in a large skillet 4 minutes or until tender.
Add wine and bring to a boil. Boil, stirring occasionally, 6 minutes or until mixture is reduced by half.
Stir in tomato, green onions, and next 3 ingredients.
Cook, stirring occasionally, until thoroughly heated.
Spoon over hot cooked pasta.

3 tablespoons hoisin sauce
2/3 cup water
3 tablespoons rice vinegar
3 tablespoons soy sauce
1 tablespoon cornstarch
Stir-fry:
2 tablespoons vegetable oil
2 garlic cloves -- pressed
1 small fresh chile -- seeded and minced
18 ounces tofu -- cut into 1" cubes
5 cups broccoli florets
1/3 cup dry sherry
1 bunch scallions -- cut into 1" pieces
1 red bell pepper, cut into strips -- optional
Combine the sauce ingredients in a small bowl.
Before beginning to stir-fry, prepare the vegetables and have all the ingredients at hand.
In a wok or large skillet, heat 1 tablespoon of the oil on medium-high heat.
Add the garlic and chile and stir-fry for just 30 seconds before adding the tofu.
Continue to stir-fry for 3 or 4 minutes, until the tofu is lightly browned.
Remove the tofu and set aside.
Add the other tablespoon of oil to the wok, heat for a few seconds, and them add the broccoli.
Stir-fry for a minute and pour in the sherry.
Stir-fry for 3 minutes.
If the broccoli begins to scorch, add a tablespoon of water.
Add the scallions and optional bell pepper, continue to stir-fry for a minute, and them the tofu and the sauce.
Stir carefully and bring to a simmer.
Simmer for 3 or 4 minutes, until the sauce thickens.

Any meal that you make with meat can be made without meat.
Do you usually eat sloppy joes for lunch and hot dogs? Well you're in luck because they're made vegan now. You can search for vegetarian meals online or buy a vegetarian cookbook. My favorite book it by Crescent Dragonwagon (can't remember the name of the book though her name is very memorable!).

and put what fruit or vegetable ingredients you have a bunch of recipes will pop up. They're not all vegetarian but I think you can add that as a condition.
