Question for vegetarians ad vegans?!
Answers: Im slowly trying to take meat out of my diet. What do you eat to substitute the nutritional values of meat? Im a picky eater...... If you can include a recipe with that fruit or vegetable I would really appreciate it!
i use the "fake" meats a lot. i take almost any meal i had before with meat and just sub in a "fake" instead.
morningstar grillers crumbles- add to pasta sauce with pasta. or put in a wrap with salsa, taco seasoning, cheese, lettuce.
make the same wrap but with morningstar chikn strips. i also like the strips when i make a veggie stir fry.
morningstar also makes really really good hot dogs. (and burgers). i tend to like the boca brand of chicken better though.
gardenburger makes fake ribs. i like them with a side of potatos and veggies.
there's a brand in the produce section of the store that makes meat balls and deli meats, like ham, turkey, and bologna. great way to have more than a cheese sandwich even if they don't really have the same taste!
also, start experimenting. i like making different mixes with beans and veggies. i eat muhc much much more than i ate when i ate meat cuz i go out of my way to try new things now and cook more on my own. and i'm picky too :P i barely ate vegetables before at all!
another good meal- veggie lasagna! instead of the meat layer use spinach, and add any other veggies you might like.
also veggie chili- i use the crumbles from morningstar, 2 types of beans, diced can of tomatos, corn, celery, and chili seasoning, and maybe some salsa. it's really really good. change it up to suit your taste.
for snacks fruit or veggies with peanut butter or hummus is great.

I now use a WHOLE LOT of tofu.. i Love it because i can put it into anything i want to.. Chickpeas are also a great sub for the "meaty" texture.. i use :

1.) eggplant
2.) asian vegetables
3.) eggs
4.) fish, seafood, etc.
5.) tofu
beans, corn, olives, soy, mushrooms, potato, rice
this are all very stodgy foods

I love my fruit, grains, beans, and vegetables.
There are many different meat substitues to use, you would never think they would make that many! :]
